How To Cook Branzino

Because branzino is on the smaller side and doesn't have large bones, it's a great fish to eat and cook whole by grilling, steaming, or baking. Stuff the cavity with lemons and fresh herbs, and let it bake at 325F for about 25 minutes, then let it rest for another 5 minutes before serving on a platter garnished with citrus slices and more fresh herbs.

There is no reason to go back. There is no reason to read his bullshit even if he had written anything of substance. I told him that 2941 indicated that both the halibut and the branzino are cooked on a grill in their kitchen. No baking dish or pan used in the preparation of either fish. He didn't dispute that. It's a small-ish fish that cooks well whole. That and the different texture/flavor of grilling is why it's often done that way. There's no real secret to it. Same as many others. A whole preparation preserves the "soft, delicate flesh" that you're so concerned about when properly grilled (or done otherwise).

The Good News Branzino, a European sea bass, is low in fat but has a wonderful richness when cooked on the bone. Barbara Lynch stuffs the fish with lemons and herbs, then grills it until the skin is browned and crispy to add even more flavor. Plus: F&W's Fish and Seafood Cooking Guide More Healthy Fish Recipes

Ingredients

Four 1-pound whole branzino—scaled and gutted, heads and tails removed Salt and freshly ground pepper 4 thyme sprigs 4 bay leaves 2 lemons—1 thinly sliced, 1 cut into wedges 1 tablespoon extra-virgin olive oil Finely chopped parsley, for serving

How to Make It

Step 1

Light a grill or preheat a grill pan. Season the fish cavities with salt and pepper. Stuff each cavity with a thyme sprig, a bay leaf and 2 lemon slices. Rub the outside of the branzino with the olive oil and season with salt and pepper.

Step 2

Grill the branzino over high heat, turning once, until browned and crisp and just cooked through, about 7 minutes per side. Serve right away, passing salt, lemon wedges and parsley at the table.

So, as the early warning signs had suggested would be the case, it was another off-the-rails wreck of an evening for the dissociating Whiffies, who on the heels of our Monday dinner out with The Pricipals, went into a terrible tizzy over the simple fact that while actual charcoal grills can be found in many a backyard, and actual wood grills can be found at many a GAR store, neither of those can be found at 2941. Still, a gas-fired flat-top is a type of grill, or at least so I've been told, and you can always crisp stuff up with a quick trip to the salamander. Instant 'grilled'.

And while there are always those who will try to blunderbuss everything, the respectful way to prepare a small, light, delicate fish like branzino is in a sautée pan or baking dish. Throw all those manly salmon, tuna, and swordfish steaks onto the grill with a satisfying Tim Allen grunt, but spare the small fry from such insult.

Well, I'm sitting here at the keyboard under the twin skylights in my office while enjoying the last of the left over fettucine carbonara. It wasn't on the Monday menu, but it's a favorite of one of The Principals, so the house whipped up a generous batch for him as a sort of professional courtesy. A little more pepper than I might have liked has been added, but while a tad to the spicy side, what we still have here is a mound of creamy deliciouness. This will all of course be gone soon, but there is also some orechiette with rapini and fontina cream sauce still waiting in the fridge as a prospective lunch. Yum!

It's meanwhile a marvelously cool summer morning out here in the always surpassing itself Sweet Spot. Just 66 degrees when I got up under mostly cloudy skies, and with humidity in the low 80's and gentle breezes in the air, it was just a wonderful walk out and back to bring in the morning paper. No wildlife met along the way, but I expect we'll see such criss-crossing the place no end in just a few short hours here.

It was a few l-o-n-g hours of course that the criminally pitiful President Ding Dong had to endure last night. Taken to task even by moderate Republicans for his mean-spirited blunders as well as those engendered by simple stupidity, he had to endure further a virtual state-by-state tour of Americans all over expressing their deep disdain for the current corrupt government and their fervent hopes and desires to see it replaced with something better. The Boob is of course widely reviled as the worst President -- and one of the worst villains -- in US history.

In other news, the Braves got off to a good start against Austin Voth at Stupidest Named Park last night, but the visitors ran off a staccato of base hits in a 4-run fifth, and then pulled away to record an 8-5 win. Daniel Hudson turned the tables by posting a 1-2-3 bottom of the ninth for his 5th Save. Looking good with the bat again was rookie Luis Garcia, who with his latest 3-for-4 effort is hitting .353.

Hitting a lot closer to .000 of course are all the baffled bozos of Falls Church City. Agog again over dinners out and prospects of genteel branzino cookery, they've been fumbling simple English phrases and making stupid statements for days now. Gotta love the new '^^^ Bullshit' sock-puppet who has come off the bench in relief of the badly battered 'JP MorganChase.' That guy just got his clock cleaned and then ran off into the Forest Without Trees. Serves 2

INGREDIENTS

2 whole Branzino, cleaned (about 1 pound each)
1 tablespoon olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 lemon, sliced into 1/4-inch thick rounds

INSTRUCTIONS

Prepare your grill (or grill pan) for medium-high heat. Drizzle the olive oil over the skin of both fish. Season the inside of each fish with half the salt and pepper. Place a few lemon slices inside each fish. Grill the fish about five minutes per side, until the skin is crisp and the flesh is opaque.

Serve with extra lemon slices.

Funny thing is that the place he pretended to go to on Monday grills their branzino. Although, it's been described as meager and dry there. Perhaps the chef's there should take the shit-shack shut-in's advice and not grill it and leave it to those who know what they are doing. Only once was I not satisfied with a grilled branzino and that wasn't because it was grilled or dry.

Your fixation on wood and charcoal doesn't negate the fact that branzino is prepared on a grill in the kitchen of 2941. It also shows how utterly clueless you are when it comes to the fact that grills can use various fuels as their heat source.

INGREDIENTS

1/4 small white onion, finely chopped
1/2 cup finely chopped fresh cilantro
1/4 cup fresh lime juice
1 teaspoon grated peeled ginger
1 teaspoon sugar
1/2 cup finely chopped fresh mint plus 4 sprigs for stuffing
2 red chiles (such as Fresno or serrano), with seeds, thinly sliced, divided
1/3 cup plus 1 tablespoon vegetable oil
Kosher salt
2 whole branzino or small red snapper, cleaned
1 lime, thinly sliced

PREPARATION

Prepare grill for medium-high heat. Mix onion, cilantro, lime juice, ginger, sugar, chopped mint, half of chiles, and 1/3 cup oil in a medium bowl; season with salt. Set relish aside.

Season inside of fish with salt. Stuff with mint sprigs, lime slices, and remaining chiles; tie with kitchen twine. Drizzle with remaining 1 tablespoon oil; season with salt. Grill fish until skin is crisp and flesh is flaky and opaque down to the bone, about 5 minutes per side. (If a small knife slides easily through the thickest part of flesh, the fish is done.) There is no descriptive text in the old DC Eater article. There is just the word, ‘grill’. That implies nothing. The lack of wood or charcoal tells us much, much more.
