Tonight I'm making fried rice using leftover pork sausage from this morning's breakfast, a few dice-sized chunks of tofu I just got done pre-cooking (deep fry), egg (also pre-cooked (stir fry) just now), sliced up shitake mushroom, a large portion of left-over jasmine rice, etc etc etc,

Might use the spouse's special soy sauce that she quick-boiled with 5-star anise, etc - nice flavor though not your standard soy sauce.

And she's preparing some left-over mackeral (sp?) we had last night - those fish were SOLID - we had three but only ate 1 1/2 of them because they were so full of meat.

It's all gonna be yummy.

I made burgers last night - mozzarella, BBQ sauce and caramelized onions.

Tonight I gave up and cooked up a package of orange chicken from Trader Joes. Two packets of orange sauce = waaaay too sweet.

I fry up some onions, put in some chopped taters... sprankle some garlic powder... fry 'em up real nice... they gotta be almost burnt... I like em stiff, y'all...

Throw in some green chile... scrumble some eggos... roller up in tortilla!

I can eat breakfast burritos for dinner if I wanted too...

Edit: SPOO! I adda some meat in there too... Take your pick... Chicken, steak, ham, tuna, whatever..

Next up, I'll tell you about my homemeade pasta alfredo...

Yes, I can cook. I like baking more though. As to fancy, I'm not big on fancy. If I want fancy I go to a restaurant. Let them do the complicated shit.

I've got a great sausage and pepper recipe that I love. Can serve it on rolls or in a bowl, bread bowls are great for it. Can use sweet or spicy sausage depending on what I feel like making. It's easy and cheap.

All day on low, say at least 8 hours. It's kinda hard to overcook stuff at such a low temperature so I wouldn't worry even if you left it in there for 12 hours.

I cooked mine in a pot on the stove. Rub the meat with spice in packet. Put in pot bring to boil then turn down to simmer 2 1/2 hr. Add veggies last 15 mins.
Besure to cut across the grain.

I am a damn good cook. I have actually attended classes at New Orleans School of Cooking. Tomorrow is a special cajun day so I am making home made red beans and rice and Cajun BBQ Shrimp. Cajun is great stuff and I make most of the basics.

Saffron is crazy expensive. I just buy a small amount at a time because I only find a need for it every month or so. I went with a friend to a place only open to commercial kitchens and got a better deal but I have not been back. Now I just get the small amount at the grocery. I think it was around $18 last time I got it and I can make two nice batches of paella with that amount. Paella is a great with a large gathering.

I haven't looked for it in a while, but i figure it's cheaper in a large grocery store than in a small hispanic type market.
Most large chains have a lot of ethnic foods now.

A Persian friend of mine brought me a big pack of saffron after one of her trips to Iran, the stuff was excellent. More saffron than I knew what to do with. I never noticed a quality issue with it.

Per a google search, the two major suppliers of saffron are Iran and Spain with others way down in the noise level. Spain was cited as having the best saffron by more than a couple places however other places cited Iran...so it's a toss-up.

We bought some saffron, origin unknown, for a Costco magazine stuffed chicken recipe:

but tried the recipe a few times without the saffron and saw no noticeable difference. The jury is still out on this expensive spice in our house, that's for sure.

Never tried using it with meat like that. Best use for saffron, IMO:

Chop some onion, celery, green pepper, and garlic, and shred some carrot. Throw it in a pot with vegetable or chicken stock and rice, a little olive oil, then add pinch of saffron, and cook til the rice is done. The rice really soaks up the saffron flavor. Best rice pilaf recipe I make. You can do it without the saffron, but you will definitely notice the difference.
