Alton Brown did a Food Network special on deep frying turkeys. Basically showing you every way in which you could blow up your house.

I think I'll pass on the deep fryer.....

You need to do this outside, not close to your home, or any trees, etc. Some friends of mine have a spring picnic every year featuring a deep fried turkey, sort of a goofy event that's grown into an annual tradition. The turkey is always FANTASTIC. Don't shy away from it because of the fire hazard. Just keep it in the yard away from everything. It's tasty tasty stuff man.

And that big pot and burner is also great for steaming crabs.

#2 Don't drop a frozen turkey in the fryer.

I think the fried turkey fad is pretty much over, as is the tur-duck-en thing. Buy a ham like everyone else.

The four things I've always been told about turkey fails:

1) Folks drop in a frozen bird which basically is akin to tossing sodium into water.

2) Folks cook the turkey on a wooden deck or near the siding of the house.

3) Folks dont account for the fact that the turkey has a lot of volume, and fill the fryer almost to the brim with cooking oil.

4) When realizing that a small fire is imminent or has started, folks pour water over fire (this is a lesson drilled into me from the USS Forestall (USS Forest Fire) incident).

+1. My old neighbors had a turkey fryer. We'd set it up in the middle of the backyard - not a house or a tree within 20 feet. That's the safe way to do it - not the idiotic "let's put it on the deck next to the vinyl siding."

I have been deep frying my turkeys at Thanksgiving every year. I do 2 or 3 then and another 1 or 2 at Xmas. The turkey is much better deep fried, the only way I make them anymore. The bird has to be thawed and dry and 15 or less lbs. AWESOME and done in 45 minutes.

My stupid neighbor where I used to live used to deep fry them in the bed of his pickup truck, he had some kind of big liner with water in it to catch the grease and stop it from sparking. Well one day it sorta tipped when some jerk purposely jumped up on the truck and the whole thing ignited and started shooting everywhere. This idiot tried driving the truck down to the fire house with flames and smoke going everywhere, but the whole fryer flipped over on the road and started a small brush fire. He's lucky the gas tank didn't explode.
