Am I correct in my assumption that the police who work events at Skins Games, Concerts, Baseball games etc. are paid by the venue and not the county/taxpayers?
It depends on where in the country you are talking about so that assumption is wrong because it can be disproved. The state of California and the city of Los Angeles picked up the tab for the MJ event and funeral so you are wrong.

PDPD (Skins), DC Metro (Nats, Verizon Center, RFK), PWCPD (Jiffy Lube) FCPD (Patriot Center).

You are correct, they get paid as a security detail by the venue. And paid very well, time and one half their regular salaries, sometimes double time. Same as utilities, or special detail work. They make big bucks, that's why francises prefer their own security detail, although they don't exhibit the same presence and have the powers of cops.

You are very correct. When you see a cop at a special event in the area, chances are he is being paid (at least indirectly) by the venue.
Even the cops who handle traffic and escorts for funeral processions are doing so "off duty" for lack of a better word.

An Aggressive detail cop brings home a salary per year way over 3 figures. And there is really no "heavy lifitng" involved, they get paid to watch Ballgames and such. That is one of the reasons there is friction between Sheriff's Dept, local Police, State Police, they all compete for the details, alot of greedy petty bickering.
