grilled tuna steak

Grilled some goddamn good tuna on the weber smokey joe tonite. Soaked the steaks in zesty italian and lemmon juice for 3 hours B4 cooking.
Anybody know some other ways to cook tuna?

When I go to a traditional diner, one of my favorite dishes is Albacore tuna melt (a grilled sandwich).

that is a good method, i like to experiment with salad dressings as marinades. zesty Italian works well, great on chicken legs or breasts.

as for other recipes with tuna, cant go wrong with olive oil, lemon zest(and juice), black pepper, salt, garlic/onion powder, cayenne, and dill. grill it low and slow my friend.

yeah if you use lemon juice you should only marinate it for 30 minutes otherwise the acid in the juice will start to cook the fish. im not against letting it marinate for a couple hours, just add the lemon juice for like the last 30 minutes of it.

Well Alias, I would think someone as sophisticated, cultured, and cosmopolitan as you would know this. LOL



White wine for fish....but since tuna steak is heavy, red wine is not out of of the question! If you go with white, pick a chardonnay. If you go with red, pick a merlot!

eesh, I'm hardly sophisticated and barely cultured, and my knowledge of wine is not worthy of a sommelier, or whatever they are called.

Any wine will do. Just make sure it is dry.

No, no, no. Merlot would completely overwhelm tuna. Pinot noir would be an appropriate choice of red with tuna. Chardonnay is probably not a great choice either. Many American chards are over-oaked and too clunky. A French chardonnay aged in stainless steel would be fine though.

If we're talking tuna steaks - I get pine nuts, zest/juice of 2 lemons, 2 cups chopped parsley, pinch of salt/pepper and some olive oil. Puree the lot.

Pat the tuna til its dry then brush the tuna w some olive oil, I press the tuna into the pureed mixture, turn to coat completely then use a nonstick pan to cook it - takes ~10minutes depending on how well you want it cooked and what the thickness is.

I'm a beer drinker more so over wine - I prefer to drink this with a hoppy IPA - dogfish head 60 (the 90 is too over the top for this) is good.

Thank you for your expertise in this matter. I think I'll choose a French chardonnay. Which one do you suggest?

Is it true that many of the American chardonnays aren't properly aged and that the oak flavor comes more from oak which has been ground to dust, poured into the wine and then filtered out at the end of the "aging" process?
