Turkey (breast) in the oven, stuffing waiting by in bread pans for its turn in the oven, fixin's for the gravy on the counter waiting for the turkey drippings, potatoes getting ready to be mashed, some corn sitting in a bowl to be nuked, sparkling cider - regular (whatever that is - kid request) and "grape", chilled and ready to be popped open.

^^^ LOL! What a fucking dope!!! I've cooked a couple of dozen Thanksgiving dinners over the years -- duck, goose, capon, game hens, guinea fowl, ham, lamb -- and every single one of them would have been better than what you could have scorched and burned on the way to the kitchen table.

Yesterday involved service for 12 people, including a 22-pound turkey, an 18-pound whole ham, boats of giblet gravy to pour over a hotel pan of dressing and actual mashed potatoes. Cranberry sauce of course along with sweet potato and green bean casseroles, with pumpkin and apple pies for dessert. Bottles of wine of course along with a lovely white sangria.

I and others got to eat all that but did no prep, cooking, or clean-up. For less than $100 per person. Yay me!!!

I love making turkey hash this time of year. Cube up a bunch of leftover turkey then fry up a shitload of frozen potatoes o'brien in melted margarine and add the turkey once the potatoes are nearly cooked, fry it up crispy and add salt, pepper and worcestershire sauce. The shit is good.

Just had the last of those Turkey Day leftovers with breakfast this morning. Mmm, mmm, good! Now it's time to start working with the caterer on a Xmas menu. Might stay under $100 per person again, but you never know. It's Xmas, after all. Yay, me!!!

They all packed it up in Dollar store aluminum pans with lids on the cheap. Then I roasted another turkey on the cheap as their way down now in price 13 pounds 8 dollars.

With real home made turkey gravy, served up as Hot Roast Turkey Sandwiches, THE BEST! on a piece of plain white bread, with savory herb stuffing peas and carrots mashed potatoes sweet potato and cranberry sauce which I forgot in my favorite dish

A cheap carry out box just like Benjamin's which was down in Newington across from Albin Tire , they had the yellow sign board Royal Hamburgers, bean soup just like Weenie beanie but also cheapo specials in one of my favorite dishes

REAL HOMEMADE ROAST TRUKEY GRAVY

This is how first class joints make Real Roast Turkey Gravy the way I do

Ya pull the heart gizzard liver and neck from the turkey and boil it about 30 minutes and save that water for the gravy , or pitch it, if I do pitch it I throw the neck in the roasting pan and time the rest up in plastic grocery bags well then into the trash, I don't chop any of it up for giblet gravy, I make regular plain turkey gravy

Ya roast up the turkey at 325 and not any more or the drippins will burn
and take it outta the pan when done.

Then ya toss some water in the pan and put the pan on the stove and move it around on the burner on a low heat and take a spatula and scrape the bottom of the pan getting all the good stuff dissolved

Then ya pour it all thru a fine mesh strainer, a big one into a tall glass pitcher, not too big around kind of tall or a jug

Ya let it sit out a bit 5 minutes, and ya will see the fat all rose up to the top, tip it a bit and take a flat spoon or skimmer and skim off just the fat, a bit will stay in there, just get the majority of the fat out of it

Then ya pour the rest into a large cast iron skillet or big pan, pitch what ya strain out

Heat it up and simmer low and take a flour dredge ya get from one of NOVAS commercial cooking stores like on Gen Washington Dr in Alex. for 2 dollars and ya sift some flour on the pan and let it settle in and begin wiskin it in

Then ya add some low salt or no salt or salty salt lick regular chicken broth and keep on wiskin and add some more flour with the dredge

Then ya can start to taste it and if too strong flavor as that pan juice is very concentrated with flavor, add some water and if ya want it lighter a bit some milk too but only a little which is what I do

Then ya let it simmer and taste and add a bit more water or broth to taste and watch it thicken, it takes time, a good 35 minutes to make good home made turkey gravy, now for pepper let the folk eating put that in as they want or salt as they dare! The salt shaker never touches my pan

Don't get it too thick as it will thicken as it cools, slap what's left in the refrigerator and the next day add some water and heat it up, slap some shaved sliced thin turkey in the gravy and heat it and pour it all over your bread for a real Hot Roast Turkey Sandwich, and ya can put some microwaved dressing under it if ya want on the side

Thanksgiving Turkey Sandwich from left over turkey

Sliced turkey some heated dressing and cranberry sauce on your favorite braed, sourdough is great for this one

Why would anyone leave Fairfax County unless he was a loser who never earned enough to have a pension adequate to live in this area? The amenities here are spectacular, so generally speaking, it's a downgrade to go anywhere else.

Meanwhile, the best sandwich places around are...

1. The Sandwich Shop (Vienna)
2. De Clieu Coffee & Sandwich (Old Town Fairfax)
3. Natalie's Baguette (Old Town Faorfax)

For a hot turkey sandwich though, a better bet might be the 29 Diner.

When your retired with a good pension and from NOVA, its nice to come back and visit family as I do. I will agree with you that there are many pluses to Fairfax Co. Like Hospital's and Doctors, shooting ranges like the NRA range and many other reasons but if you think NOVA is nirvana you have never eaten anything outside of lifeless chain resturauant NOVA.

Hell there's nothing in NOVA to even make a Diners and Dives show about ! So I'm moving my old shack minus the trailer I took down Dragon Run to Tysons, I would enjoy talking politics with you and Bill N whom I will be making something for Christmas to show. This is the artists conception. LOL!

I love making turkey hash this time of year. Cube up a bunch of leftover turkey then fry up a shitload of frozen potatoes o'brien in melted margarine and add the turkey once the potatoes are nearly cooked, fry it up crispy and add salt, pepper and worcestershire sauce. The shit is good.
