I did another....A Winner and Champion Dish..! Beef Rouladen..Potato Dumplings..Red Cabbage with Carrots..Gravy with Sour Cream.. !! With a Hobo Junction Ice Cold Beer Natch!! And the way I do It..the Salt Shaker never touches the food.
Now..Because I am a Nice Man..!!..Heres How To Do It Baby!!
A Cheap pack of 3 pieces or more "CAB Top Round Sandwich Steak pounded thin between plastic warp with a 13 dollar meat tenderizer 2 sided hammer from Sur La Tab at Tysons..!! ,I got the meat From Weiss Market here in Frednecksvillage..Or check with the meat people at your grocery store..If You cant find such a piece of beef..Natch!!
Then.. Grey Poupon smeared on um, a bit of sliced onion, a half piece of low salt bacon, a half a Dill pickle Mt Olive Brand Spear in each cut the long way.., and roll um up the long way of the way the beef lays..and secure with a couple tooth picks.
Into A La Creuset Dutch oven or any other cheap heavy pot with a lid with some olive oil, sauté um up, move um round with tongs, Stir up the bits in the bottom and add a can of Low Sodium Swanson Beef Broth if you can find the low salt one..Or use the regular..COVER UM..and Simmer um up at low heat 2 hrs. Then add some cornstarch in some water mixed up..about a teaspoon, let it simmer and thicken it takes time..,add a wee bit of half and half cream and a tablespoon of sour crème, simmer it use a whip on the sauce, till it thickens, you can remove the Rouladen as the gravy simmers..Also you can skim some greasy fat off it before making the gravy..Natch!!
Mean While back at the Ranch..You've peeled some potatoes and cut um up and boiled up till just done, not too soft them drain and mash um..leave um be..Get a big pot of water boiling.. a good 2 gallons..No salt needed.. Take the mashed potatoes and add some flour and 1 egg mix it up and add some nutmeg a pinch and a bit.. and a bit of milk..don't over do the milk, mix it up till its a sticky doughy "Thingy" as you young uns call it.. Round some up into ball ..Patty cake games rounding um up and let up drop into the boiling water.. Then make the gravy on the Rouladen..When the gravys done after 12-15 minutes bring up the dumplings from the boiling water and drain um of.. Plate her Up Baby..Beef Rouladen with Gravy and Potato Dumplings..Red Cabbage you can get it from a jar or make any kind of veggies to go with it.. Carrots and Peas are a Good German choice.
