Though many new cars use keyless ignitions, the majority of cars do not. They have keyless entry, but keyed ignition locks. What wakes it more difficult is that cars from 1990-2016 have anti-theft circuitry that you need to work around. Not too tough if you know what you're doing.
As for installing it in a car with a manual transmission:
'Done that. It's sort of like running the output of a generator to your home wiring without using switchgear; as long as you remember to turn off the main before applying your own power, you're good. If you forget, you're screwed. Relying on humans to not make common mistakes is not good safety policy. Forget to apply the handbrake firmly enough, or have it out of adjustment/balky, or leave the transmission in first gear by mistake, and the car wil gallop forward when the remote starter is employed with the car in gear and your interlock disabled.
