OP, I would accept this challenge as a Mitzvah. Let's say for the sake of argument the administrators of Jackson Middle School simply messed up. I think that's far more likely than antisemitism.
I recommend you call the school, and ask for a face-to-face meeting with the principal to discuss your concerns, and what can be done about them. Let them know you as a parent want to be vested in the school and supportive, and the first step to that is Back to School night. Some ideas to bring up:
1) See if the school would have any interest in hosting a "break the fast" potluck for the Jewish students of the school. Perhaps this could happen mid-way through the evening.
2) Simply ask them to move the date. And let them know that Yom Kippur is the holiest holiday on the Jewish Calendar. It's the equivalent of scheduling back-to-school night on Christmas and/or Easter, It's early enough they might just do it.
3) Attend early religious services (in person or over the Internet) and then just go to Back to School night. Maybe skip the Shofar. IF you feel robbed, there are temple services the other 51 weeks of the year. And other ways to get involved in the religion. Use this challenge to evaluate whether you are a producer or consumer of Judaism.
My thoughts anyway. This is an opportunity to establish a dialogue with Jackson Middle School, and perhaps an opening to fostering a Jewish community within the student body.
I'm an optimist at heart admittedly. But I would try the steps above before stating the school simply hates Jews.
