Friends on FXU With DAJAX's Baked Mahi Mahi Fish Vera Cruz with a DAJAX twist. No Jalapenos or Lime just add fresh cut corn from the cob . Extraordinary !

You need a nice piece of fresh Mahi Mahi some butter olive oil Jasmine rice a veggie mine was kale, a fresh tomato fresh corn on the cob a sweet onion and a green pepper with a piece sliced off or from the Giant Food Salad bar.

Heat the oven to 325F. Wash and chop up the tomato . Boil the corn and cut the kernels off the cob, don't sample too many there sweet you know. Slice up and dice some sweet onion and green pepper slap it all into a sauté pan with a bit of olive oil and sauté a bit about 2 minutes not too long then wipe off the Mahi Mahi or other white fish and rub it with olive oil and some butter and put it skin side down on your baking dish or Nordicware platter from a thrift store. In a baking dish you can have several pieces of fish. Put the sautéed veggies on the top and bake at 325F for about 25 minutes check to see if the fish flakes and is done. On the side I add 2 pepperoncini's "sweet Greek peppers" for a little heat. Add the rice and side veggies and your done.

Here's an EZ way to make Potatoes Au gratin, grap a baking potato and a sweet Vidalia onion and slice them up, the tater about 1/4 inch thick all of it and just some of the onion very thin. Spray with Pam or butter up a Au Gratin baking dish and layer some taters across the bottom dot with some small dabs of butter of margarine and sprinkle some flour in there just a bit with some grated mild cheddar cheese too , Then repeat with tater onion and cheese butter dots and flour. Put some flour and cheese on the top and fill it almost to the edge of the baking dish with milk. Place a piece of aluminum foil across the top and seal it and put in into a baking pan as the milk with runneth over.Bake at 325 about 50 minutes remove the foil and bake it until its golden brown about 35 minutes later. You'll smell it when its done and it will smell good! just like in a good steakhouse !

Simple and elegant Italian Seafood Seafood Just for Bill N the man of reason on FXU

Serve with fresh grated Parmesan Reggiano cheese , garlic or crisp bread and a green salad

Too complicated to tell you how to make it , stick with my first recipe toast or make a Camel Rider just like in Jacksonville Florida

Theres a hundred ways to make it really. Look at Google Images or head to Fishmarket in Old Town Alex for the real thing with there secret sauce and it is very good, Mr Ray the man who founded Fishmarket put it on the menu years ago !

My Cacciucco sauce for 2 to 4 servings

14 oz jar of Prego pasta sauce or 14 oz of a big bottle of your favorite

1 can Snows or Bumblebee Canned Minced Clams with the broth

Olive oil 1 tablespoon

1/2 teaspoon dried red pepper flakes

1/2 teaspoon dried oregano

1/4 cup cheap white wine

Juice of 1/2 lemon squeezed out

Black Pepper a lil bit

Method : Open cans heat up ..

You can put many types of seafood in it. I use what Fishmarket uses Squid Shrimp Scallops Clams and Mussels, place cooked linguini in a heated pasta bowl and pour seafood with sauce over , add steamed shellfish and a little more sauce then the grated cheese

In NOVA head to Wegmans or one of the other high class supermarkets for the seafood, Giant has good seafood so does Safeway and others but for 2 servings Wegmans will sell you one clam and scallop so you don't need a whole bag

Green Beer and Corned Beef Cabbage Potatoes Carrots and Sweet Onion..

You wash the Beef and Boil it with some pepper corns skim it off now and then...the package has the time to boil by the pound..bout 20 minutes..Then you add the veggies, the potatoes and carrots cabbage and onion and boil about 15 minutes untill its all done..and that's it . Irish Soda bread from Shoppers.. No Beer till later..driving ya know.. And Whatta carry out box for 22.95..!

Slice that chicken breast carefully long ways into 2 pieces, beat it thinner with a meat mallet between a piece of plastic wrap and dredge it in flour, put it into a egg wash of 1 egg beaten with some milk then into bread crumbs and into the fridge for a hour to chill out. Then put some canola oil into the heavy iron skillet and bring it up above medium heat and slap the 1 cutlet in. Fry a few minutes don't let it get too hot and turn , cook till browned and done and drain it, do the other the same way , pull it out and drain on paper towels and your ready to go with home made mashed taters fresh green beans and county gravy by Pioneer from a package
