Variations on the grilled cheese

I have been craving a grilled cheese and will be making one for lunch. I want something a little more exciting though - any good recipes that you peeps know of? I could google it myself but would like firsthand recommendations.

When I was a kid my grandmother used to make us grilled cheese with slices of lightly fried SPAM in it.

I've never had the nerve to actually buy spam, but believe it or not, those sandwiches were really good.

Monterey pepper jack cheese is really good. Toss in some more jalapeƱos and some turkey also.

Open faced grilled chesse with ham/turkey. Place bread on cookie sheet, cover in butter. Place cheese on top, brush melted butter on top of the chesse. Place small slices of ham or turkey on the cheese. Broil in your oven or toaster oven until the cheese starts to bubble. Slice with a pizza cutter into quarters. Make sure you have your nitro pills with in reach. Enjoy!

Little bit of mustard on each slice of bread, two strips of bacon. For best grilled cheese ever try a slice of plain old cheddar and another slice of Wegman's extra sharp cheddar. $15.00 per lb. but worth it. Don't use two slices of it though because it's too rich.

I've had a lobster grilled cheese sandwich before. It was okay, but I think I prefer just varying the cheese and what soup I am dipping the sandwich into.

I just made a grilled cheese sandwich with goat cheese and leftover grilled veggies... very tasty. I'm always excited when I actually remember to eat leftovers.

I'm afraid I drink soda, not pop. And I go to the movies, not the cinema. We must have incompatible regional linguistic variations in our vocabularies! I simply don't think there is anyway to overcome such a gap.

Only variation I like with a grilled sandwich (so far) is to take the bread, add the cheese, add some pastrami, add some saurkraut (sp?), add some thousand island dressing, fry using butter only on grill pan, and munch.

Another variation to the grilled cheese sammich that I love is to place two slices of bread under the broiler (or toaster oven) to toast on one side. Remove from oven and add cheese to one slice and place back under the broiler until melted. Remove from oven. Lightly spread mayo on the other slice, add crisp bacon and sliced avacado sprinkled with salt and pepper. I had this for dinner tonight...loved it!
