Happy New Year..Good Trailer Food Now For Us Po Folk! ..On New years Day, The first meal of the year ! Good Luck Food !!

Hopping John !

Made simply with Dried Black Eye Peas, water, a couple pieces bacon chopped up , sauted some of the grease added to the pot, a piece of onion and a clove garlic chopped and minced. I also added a can of low salt chicken broth. Takes about 1 1/2 hours to cook low simmer. No salt shaker used in mine but theres some from that chicken broth.. Not too bad though.. Us Older folk don't need all that salt! Young Uns either!!

Do as you want..Salt It Up..Add Green pepper, Red pepper, Sausage, Ham Hocks, Greens,Green Onions, Smoked Turkey Neck, Cajun spice.Hot Sauce!! .As you like it!! I like it simple!! Only a lil bit O rice For me too!!

Now go see if there are any Black eye Peas on the shelf left at the Grocery store..Ya You can use canned..No time to soak Dry beans overnight ?? Just soak um a hour , then boil um up..!
