Why do people buy meat from meat truck guys?

There are a couple meat guys who drive around little rocky slum in white toyota tacomas with a big chest freezer in the bed of the truck and they sell steaks and fish including lobster tails.
No way in hell I would eat truck meat! You have no idea if it has been inspected or properly frozen/refrigerated. People buy that shit all the time though. I wonder if they are in violation of the law? The guys look like 30 something white guys.
