What's with the old Asian ladies gathering plants on the sides of the W&OD Trail?

Several times now, I've seen old Asian ladies selectively gathering plants on the sides of the W&OD Trail. What are they picking? Are there edible plants there that people eat?

They're pulling up dandelion roots for tea. No joke. I forget what dandelion root tea is supposed to do for you. What they fail to realize is that NVRPA sprays along that trail. Can't be healthy.

could be fern fronds. The ferns around here are quite tasty if you harvest the young shoots before they uncurl. I believe they have lots of vitamins too.

@OP: What a complete idiot! Don't you have anything better to do than worry about some little old Asian Ladies picking wild veggies. Don't you have any idea that there is a bounty of free food available in the county parklands. Myself I pick mulberries, black cap raspberries, blackberries, pawpaws, persimmons in the county parklands all of the time and I'm not Asian. Get a life!

They are harvesting assorted plants or weeds for cooking or medicinal purposes. They're quite blatant about it even though removing any kind of plant from parkland is against the law.
