Willard's is garbage. Not authentic, dry as hell, etc. The best ribs hands down in the area is Carolina Brothers in Ashburn off of Ashburn Rd. and off the W & OD Trail. The atmosphere is very old school kitchen BBQ and the food is as close to authentic as it gets around here. They've even got the smokers out front.

Carolina Brothers is the real deal but I've never tried their ribs. Will have to give them a shot next time I'm out that way.

Smoked, slow cooked meats dry at the ends - that's why one pulls it or sauces it. You want "moist" = you want meat drenched in brown corn syrup. CB is your place.

Burnt ends are the end of the beef brisket which are trimmed off, sauced and served as its own entree. It started off in Kansas City, but there are places around here who serve them, like Willards. They do not have the best representation of them, but they do have them.

Carolina = pig (almost exclusively)
KC = usually cow but some pig and a bit of chicken
Texas = cow
Memphis = usually pig

I'm not a fan of -most- Carolina BBQ. The meat is fine. Its the vinegar sauce (or the mustard type sauce). Not my thing.

FWIW, if that's what one likes, go for it - but it's funny that the OP asked @ one specific type, and a good source for it was decried b/c of it's offerings on another type of 'Q.

Carolina Brother's ribs aren't dry rub, but they definitely are not soaked in sauce. Anyone who says the ribs there are a "pathetic mess of ruined meat" has 1)never ate there and 2)says nonsense to get attention from people. This thread was meant to highlight BBQ places in the area, not a pissing contest. Btw Carolina Brothers also has awesome chicken, beef and sometimes brisket sandwiches (pulled meat) that are real good.

So you're mad because the place you said was "decried"? Maybe it was because it's a "Texas BBQ" joint that is run by illegal immigrants from Central America and the food quality is comparable to McDonalds for BBQ?

The St. Louis-style spare ribs at Famous Dave's are great IMO, but the baby back ribs I've had came out a bit too charred and crusty the last two times. Their BBQ sauces are excellent too.

Not sure it's open this time of year but there's a guy who sells BBQ at the Shell station parking lot on Sundays. He's there 11 am to 6 pm with his smoker. I work Sundays so i haven't tried but I've heard good things about his product. he's at the Shell station on Rte 7 after Dranesville Rd headed west. I think the area is called Cedar Lake.

Nope...far from the truth. That is the first time I have ever been there and I doubt that I will ever go again. I was given a gift certificate from a friend and just wanted to use it. Just saying how bad Willards has gotten when a place like this is better.

Carolina Brothers is pretty good but the pulled pork is tasteless. Buy the Tongue Tinglin' sauce bottle sold there. It's the best bbq sauce I've tasted.
