Seriously, try the chili con queso. You will not regret it.

Unfortunately, not everyone feels this way. The "restaurant" has been plagued with health violations over the years, as well as allegations over the freshness of their ingredients. It is believed that the majority of food is stored in freezers before being microwaved when a certain dish is ordered, thus explaining the unusually short wait between the time one orders and the time one's food arrives.

A former Carlos O'Kelley's cook confirms that the food is microwaved before it is served, unless it is a grill item. This person also confirms that all the food is stored in walk-in freezers.
