It is believed that the majority of food is stored in freezers before being microwaved when a certain dish is ordered, thus explaining the unusually short wait between the time one orders and the time one's food arrives.
A former Carlos O'Kelley's cook confirms that the food is microwaved before it is served, unless it is a grill item. This person also confirms that all the food is stored in walk-in freezers.
