I've been to too many restaurants and bars that are packed and then out of business a few months later. It comes down to management. Profit margins are razor thin in the restaurant business. You can have a packed house every night and go belly up if you have a lot of waste (like giving away too much free booze) and mismanagement (like giving away too much free booze). In fact, booze is a restaurant's reliable profit center, so when you see one comping booze and offering ridiculous drink specials, they probably won't be around for long.
