Best Chili recipe

I have a jumbo amount of TP from Costco and need to start making a dent in it. So, I was Wondering if any of you fine posters know of a great chili recipe. I've tried some recipes and haven't found the "one" yet. I like it spicy.

I have a recipe that won many a chili cookoff. It takes 3 to 4 hours to get right and is made with real beef and not hamburger. Beans can be added if wanted, but I prefer not. It is cooked in two phases and is worth all of the trouble.

Phase I

Brown 3 lbs of good quality stew beef cut into about 1 inch chunks in a large pot. When brown add 1 lb ground pork and cook till done. Drain fat. Then add 1/4 c dehydrated minced onions, 1/2 tbsp granulated garlic, 1 can beef stock, 2 cans chicken stock, 14 oz can tomato sauce, 1/2 tbsp cumin, 3 tbsp chili powder, 1 tsp black pepper, 1 seeded and chopped jalapano pepper, 1 4 oz can mild chilies.

Bring to slight boil and cook covered for 1 1/2 hrs stirring every 20-30 minutes.

Phase II

Add 8 oz tomato sauce, 1/4 c chili powder, 2 tbsp hot chili powder, 2 tbsp cumin, 1 tsp granulated garlic, 2 tbsp hot sauce, 1 tbsp brown sugar.

Bring to a slight boil and simmer uncovered for 1 1/2 to 2 hours, until beef is very tender. If beans are desired 1 14 oz can can be added the last 1/2 hour of cooking. Water or stock can be added during cooking if it becomes too thick.

This is an awesome chili. Very rich and really good with cheese and maybe some raw onions. Corn bread on the side.

Moist Cornbread Recipe

Moist Cornbread:

Ingredients:

1 box Jiffy Corn Bread mix
2 eggs
1 stick softened or melted butter
1/4 c. sugar
1 can drained corn
1 can creamed corn
1 cup sour cream

Mix all ingredients
Pour in 9X13 pan (sprayed lightly w/ Pam)

Bake at 350 degrees for 45mins-1hr.

Enjoy!

This does sound good. has to be moist with the creamed corn and sour cream.. Never seen sour cream in a corn bread. Is it very sweet?? I could cut back on sugar if it is sweet.

To the above I would also add a couple of tablespoons of corn flour,and just a quarter of a can of evaporated milk (carnations). finally, to give it some backbone a half pint of Rebel Yell or good old Jack Daniels, or I forgot a teaspon of corn syrup. Enjoy

Mom's Chili

1 lb hamburger
1 med. onion. diced
1 16 oz can tomatos
1 sm can tomato paste
Chili powder to taste (I like lots)
Cayenne pepper to taste
salt to taste
garlic if you like
beef broth

In the bottom of your soup pot, Saute onions until translucent. Add hamburger and brown, using a fork to break it up in the bottom of your soup pot.
Some cooks use a separate skillet but why clean one when you don't have
to?

Add all other ingredients and simmer for at least one hour stirring occasionally. Longer is better. If you don't want to use beef broth,
water is fine or mix them together. Depending on whether you like yours
"soupy" or "gutsy" add the liquid to desired "gutyiness"

You can add hot peppers if you like. If you really want to set someone
on fire, don't cook the peppers, just split them open, take out seeds
and let them sit in the bottom of the pot overnight in the fridge
along with the chili. I assume no liability for irresponsible use of
this technique.

This recipe is always great the next day.

I do not use beans because some in my family do not like them. To me
chili is a very flexible recipe and I sometimes add or delete things,
depending on whom I'm cooking for. In Cincinnati, they'll put cheese
on top and even spaghetti sometimes. In Thailand, it's called Phat Prik
(pronounced "fot preeck" and God only knows what they put in it.)
I knew guys who would order it off a restaurant menu just to get to
hear the waitress say, "You have big phat prick or little phat prick?

They are gross, your recipe sounds good. I can't give up My Chili recipe but I have something similar. It's called three bean dinner and I got it from my Ant.
I cooked it for the super bowl in a crock pot.

i have a super vegetarian chili recipe, that's very hearty and spicy.It has black and white beans, corn, etc. in it. I kind of combined 3 recipes.

You could always add meat to it if you wanted.

I'd be glad to share it if anyone wants it.

Here ya go. Sorta made this up on my own. Lentils are some hearty eats, this is a good high-protein, high-fiber dish, without all the greasy meat. I actually prefer this over chili w/ meat. It freezes well too.

olive oil
2 medium onions, chopped
6 cloves garlic, chopped
1 Tbsp. cumin
1/4 cup chili powder
1 tsp. oregano
a pinch of cinnamon (optional)
1 tsp. red pepper flakes (add more to make it spicier)
2 carrots, peeled and diced into 1/2 inch cubes
4 stalks celery, diced into 1/2 inch cubes
2 green peppers, diced into 1/2 inch cubes

5 cups vegetable stock (I use homemade, but any low-sodium brand will do)

1 28 oz. can diced tomatoes
1 16 oz. bag dried lentils (pick out any stems, etc., and rinse)
1 can black beans, drained and rinsed
1 cup beer
Salt and Pepper to taste

Heat oil in large pot and sautee the onions, garlic, carrots and celery.
Add salt and black pepper and cook until softened, about 5-10 minutes.
Add cumin, chili powder, oregano, red pepper flakes and green pepper and
cook for another 5 minutes.

Add tomatoes and vegetable stock to pot and bring to a boil. Add lentils
and beer and bring to another boil. Lower heat and simmer, 30 minutes.
Add the black beans and simmer another 15 minutes, until the lentils
are tender, but not mushy.

I don't make it real spicy, so add more red pepper flakes if you want heat. Or add whatever hot stuff you like (I'm just a fan of red pepper flakes).

I should also add:

While it's cooking, take your extra vegetables sitting around and make vegetable stock, then freeze it. Then you'll always have homemade stock on hand and won't have to throw out those extra carrots or celery you know you're probably not going to eat. I do this whenever I make soup and it's a good cycle to get into.

Chicken stock adds even more flavor, I'm just too lazy to make chicken stock unless I need it.

Make sure you pick thru the lentils, there's always an odd stem in there and occasionally you'll even find a stone.

There is no universal answer on chili; everyone's recipes are great. This is one of those queries that can spark civil war. One suggestion on stock: I get one of those rottiserie chickens from Safeway, Shoppers, etc. Great first meal, good shedded chicken for chicken tacos or whatever. I always take the carcass and make stock. Onions, celery, carrots, or whatever vegetables you have. The Spaniards typically throw a peeled, chopped turnip as well. In my opinion, the turnip is a great 30 cent investment -- it adds a lot.

That's what I do when I make chicken soup. You can get a lot of good meat & stock out of those rotisserie chickens without spending the time roasting a bird on your own. Harris Teeter sells them for $4.99 sometimes, which is a great deal.

Easy No-Hassle Chili (no chopping, stirring, etc)

Chili Mac and Cheese is the bomb! Saw it on Diners Drive ins and made it. Many different ingrediants you can use but of course you need ground beef, macaroni, chedder cheese, tabsasco sauce.
