Charcoal or gas, Which grills best
Posted by: Fat_Guy ()
Date: June 27, 2010 02:20PM

Just got my deck replaced last week, Now I gotta pick up a grill for Pool/deck 3day weekend party next weekend. Does charcoal really cause ass cancer like they say? I think charcoal tastes better but I dont want ass cancer. I have a plumber that says he can run natural gas to my deck if I want so I dont have to do the propane tank thing. What do you guys think?

I've had both and I like my gas grill better. I find it easier to just turn on and cook and it's not as messy as charcoal. If you want a smokey taste, just add wood chips or even charcoal within some tin foil to get that flavoring.

My neighbor has a natural gas line on his deck that supplies his grill, but he's locked into that one place on the deck. Plus when we have a block party, he can't wheel his out and contribute to the cooking. And as far as the ass cancer goes...I've heard that the risk is from eating a lot of those charred bits on the meats when you're done cooking, not necessarily from the use of charcoal.

Be a man and get a charcoal grill. It takes 3 seconds to fill up a charcoal chimney and get it started. Yes, you have to buy charcoal and yes, you'll have to dispose of the ashes, but that's the point of having a pair.

Come on warhawk, I think man has been cooking meat over wood and then charcoal for hundred of centuries before this age started cooking with gas. Now after all these centuries it is causing cancer. I rather not have the propane or natural gas fumes soaked on or in meat and would be scared of petroleum by products causing more than just cancer. Depending on who you talk to everything causes cancer. The best thing to do is stop eating, drinking and breathing...see how long you will live. I have a charcoal grill.

That's true. Just cook on top of some foil, don't overcook it, and you should be straight.

I like the gas grills we've always had, because they're much cleaner, and easier to use overall. I've never noticed a taste difference of better-or-worse when comparing gas to charcoal either.

I posed the same conundrum once, but then again, people died a lot younger back in the day, so any cancer development was negligible regarding how food was prepared.

How do you know cancer development is caused by food prepartion? I think it is one of those many many many theories. Interesting more people died younger back in the day than today???? What was the great scientific stuy that made that procrastination? I think we been dying the same like back in the day, no matter the age from war, disease, famine, disaters, crime, etc etc etc. I rather eat than starve. Hell if there was nothing left on this planet but man one day and you get hungry enough...your guess is good as mine what will be on the menu to eat.

I think charcoal grilling tastes better, but I'd take gas any day. It starts more quickly, you have better control over the heat, and you don't have to get rid of ashes (which is a pain when you're drunk and cooking steaks at 3AM).

Charcoal has been linked with carcinogens, but unless you're eating every meal off the grill for years (which would be bad anyway), I wouldn't worry about it.

All charred meat causes ass cancer. It doesn't matter how you cook it. Just get a tube scope stuck up your ass every few years, if you are that concerned about it.

Charcoal usually tastes a bit better but as others have said tis a pain and you can mimic the charcoal taste by using chips or charcoal wrapped in foil. So given that + the tremendous ease gas has over charcoal - I'd definitely go gas.

As for cancer - as others have mentioned - 1. it's the charred meats that have an increased risk of promoting cancer and 2. you'd have to eat a fairly inordinate amount of overly burnt meat to be at risk. As with everything in life - keep things in moderation and perspective. Your diet should be heavier on the leafy/fruity side of things with a small percentage coming from meats.

bloody blisters wrote:

While that is a nice little jingle - if you know where and how most of your meat is prepared before it goes to the supermarket - you would cook just about everything til it's well done. I agree it doesn't taste as good, but unless you know the supply-chain of your meat (especially ground beef) what you're ingesting is likely quite nasty. Perhaps it tastes good but you wouldn't eat it if you knew what was in it. This usually does not apply to meats from non-mass industrialized cattle farms or abattoirs.

My preference is charcoal. The flavor is excellent and I find that it's much easier to slow cook on a charcoal grill than it is over a gas grill. Get a chimney and you won't need any lighter fluid. You won't need instant light coals either (which are just coated in lighter fluid). Oh, and *never* use instant light coals in a chimney.

If you really can't decide, just get a combination charcoal and gas grill. Your available grilling space will be smaller because it will be split roughly in half (half charcoal, half gas), but it will give you some flexibility.

If you go gas, you'll use it more often. Just make sure it has plenty of btu's. I got a Weber portable propane grill as a gift and it just doesn't seem to crank out enough heat to caramelize the meat.

Personally, you should look at the Weber gas grills. They are awesome! They're built like tanks. If you do go this route, buy it from Home Depot. Weber and HD have a special arrangement where the grills that HD sells for Weber (Spirit line) have the cast iron grates included in the box.

None of the stamped metal grates covered with porcelain. The cast grates cost $70 - $80, if you have to buy them alone.

Gas grills are fine, but have become an object for faggy yuppies as yet another avenue of conspicuous consumption.

Meat or fish cooked over lump charcoal = amazing.

Meat or fish cooked over gas? You may as well don a skirt and do that in the kitchen.

There is no clear answer to your question. Get both or get a hybrid grill.

I have found that a Weber kettle fueled by Sam's choice charcoal (not the instant light) is the best.

I searched gas grill on youtube and this came back but I am unsure why.

True. The dripping of the meat onto the embers releases HCA's which coat the meat. No dripping, no carcinogens.

Charcoal itself is fine.

I have to agree that Weber is the way to go. Though the Spirit line is their bait model line. For just a bit more get the Genesis line with the searing burner (model 330 I think). The Genesis line is much more heavy duty, it should last for decades. Buy it in a color because Weber will charge $100 more for stainless steel.

It's a grill, charcoal. If you don't want the charcoal flavor or this butt cancer, use an oven. I really hope you don't have a gas range in your house and are debating on needing one outside.

...although considering the orig question was posted in 2010, I shall assume he's made his choice and doesn't care about or opinions anymore.

I use gas - easy to use and get the temperature right.

However, as the no-longer-existent Troll said above, use wood chips on the side to get wood smoke involved. I fairly recently started doing this and will never go back.

Bought a bag of apple wood chips at the local ACE, cleaned out a used can from some soup or something, throw a small handful of chips into the can, place the can under the grill on top of the (right) burner, light the fire, wait a bit with the cover down, then grill whatever I'm going to grill with frequent cover-down to smoke enhance.

Yummy.

========

W.r.t. cancer and grilling, etc, I would be careful believing studies that are based on studies about something else. To make up an example, "wood based grilling causes carcinogens to be formed"...but no known cancers have been recorded from grilling. Instead, specially bred rodents are treated with suspected carcinogens at extreme dosage levels, typically on their SKIN. If this test population exhibits skin cancer at rates measurably above the untreated population, the suspected carcinogen is labeled a carcinogen whether or not it has ever produced a verifiable cancer under normal presence amounts and normal exposure types.

This same testing methodology is why some products are laughably labeled, for example, "Note - this product contains ingredients that California has determined cause cancer"...because California (or whatever state/region) has made that determination but other places may not have.

I have both. I bought a 3-burner Charbroil gas grill last year and a Char-Griller Akorn Kamado-style grill/smoker this spring. Since I have gotten my charcoal grill, I have only used my gas grill once.

I love cooking on my Akorn so far. It is a Japanese style set-up and looks like an egg. Unlike the Brig Green Egg or similar which are ceramic and tons of cash, the Akorn is insulated metal and about a quarter of the cost. I smoked a 7.5 lb boston butt on it a couple weeks ago to try smoking for the first time and it came out great. The design of the grill allows you to cook low and slow and is really efficient on charcoal usage. You can also open both vents (one top, one bottom) and get that thing up to 700+ degrees inside. I use both lump wood and briquettes depending on what I am cooking. The only reason I go into Walmart is to get the Royal Oak lump wood charcoal.

Only thing about the grill is that it isn't that easy to add more wood for smoking during a smoking session if you need to and the cool down time for it is up to 4 hours after you shut all the vents off. Gas is quicker to heat up and cool down. I like them both. I have a rotisserie for gas grill that I need to try out soon.

Propane is the best, makes it so you can taste the meat, not the heat!

if you want a charcoal flavor you can just eat charcoal.

the above answer is spot on, if one wants the best of both worlds, they'd have charcoal and a gas grill.

charcoal grills get hotter, or can be made hotter, than a gas grill....it's science. so if one needs to sear the piss out of something w/o over cooking - ahi tuna or flank steak for example - charcoal is the only way to go. like mentioned above, its blasphemy using lighter fluid or any "pre-soaked" lump charcoal. straight lumps lit in a chimney starter. the type of lump, forgetting the MatchLight crap, also makes a difference. straight kingsford is what everybody knows, but there's other out there with minimal to no fillers. that's the crap ( along with lighter fluid started lumps ) that imposes an off or acrid taste to food.

hardwood charcoal ( the really light bags mentioned above ), is good too, and some pro grillers swear by it. however, it also doesnt get as hot as lump, and it doesnt last near as long.

grilling over charcoal, lump or hardwood, doesnt exactly add a "smoke flavor", once the coals are lit, there is no smoke, that's what the chimney starter is for, it's nothing but pure radiant heat.

a weber kettle is the bee's knees when it comes to backyard grilling. it's only drawback is the size. kinda hard to 5 or 6 slabs of ribs on it. dont even bother with the 18" one, the 22" is way better. there's also a bigger one, 26" i think, but for some reason weber doesnt have all the goodies for that size, e.g. the rotisserie contraption.

one also needs to learn how to use charcoal and how to load it for different types of cooking - direct, indirect, offset, etc. as well as how to set the vents to maintain temps for extended periods of time. you'd be surprised how long a single load of lumps last if vents are set correctly. for longer times where it needs to be filled, weber has grates hinged on either end so more lumps can be loaded w/o taking the whole shooting match off.

gas is great for ASAP grilling, but it has flaws too. again, doesnt get as hot ( if one needs a really hot fire ), the ignitors die, burners rust/wear out, and they all invariably have hot and cool spots on the grilling surface. but for things like a bunch of grilled corn in the husk, or some dogs, or while say ribs are going strong on the charcoal a gas grill could be used for the final stuff - like corn above, a nice saucepan full of baked beans, some grilled veggies....things that take a lot of room and dont need to grill/cook near as long.

FWIW... I am the "BBQ Man". I just had a hunch that if I posted as me, this whole thread might've been taken in a different direction. (I'm testing that theory now, I suppose.)

I'm not a heavy enthusiast myself -- I've just been around enough die-hard grill gurus and sampled enough results to honestly believe that charcoal tastes better. The proper wood chips (Mesquite, etc) open up a whole new world of possibilities.

That said, we almost always use gas at home.

Charcoal is better! Apple chips for chicken pork and fish, hickory chips for beef and veggies.
You gotta have both charcoal and gas. A tabletop gas grill that uses one pound propane cylinders is fine. The charcoal grill must be a weber kettle 18 or 22 inch.

Gas grill for weeknights means no fuss no muss. Charcoal for weekends and large get-togethers. If the gas grill has a side burner that is always handy.

There is a warning label on the gas bottles that warns you of gayness that you can get from the propane.

Okay first off, you cannot rush grilling. Grilling is a ritual which must be savored over a long period of time. Charcoal, wood chips and wood chunks should be employed to create your very own blend of smoky flavor. Do not even think of using that pussified instant light charcoal! Instant light charcoal puts a diesel fuel flavor in the food. Start your charcoal in a chimney and mix in some dry wood chips to help get the charcoal going, after spreading the coals out you can decide if you want to sprinkle a few more briquettes on top to increase burn time. Second off, do the majority of your grilling with the lid on, it keeps flavor and moisture in.
If you must grill with gas go ahead and cut off your cock and balls right now and feed them to some dogs.

The only way to grill is with natural gas. Charcoal is for cave men. A natural gas grill can be left burning for weeks at a time and it never runs out of fuel. Propane has ass flavoring in it.

Charcoal is for bbq or grilling. Gas is for grilling only.

I like to get the meat cutter guy at the store to cut up an oven stuffer roaster into fryer parts. I parboil the parts in water mixed with beer for 20 minutes then throw the parts on a hot weber grill to sear the skin then let it slow smoke with apple chips in the weber kettle with the lid on and vents half open for 45 minutes. Awesome!

Grilling shouldn't be easy - like sex and all great rituals, you should revel in all three parts: Intensification, Ritual Cleansing, and Summoning the Power of the Gods. Gas is handjob from a possible tranny: charcoal is 6 hours straight with a valkyrie who likes it in the butt and (thankfully) knows CPR.

I have been using my gas grill a bit more this summer than last. Only used it once last year. Gass grill is nice and fast, but I do prefer my kamado style grill burning lump wood charcoal for most stuff.

I'd agree but mostly because burgers and dogs are hardly food at all. Don't get me wrong - I eat the odd burger myself, but long ago a french petite amie taught me how to taste my food, really taste it. She said that if it has much more than 4 ingredients it's like listening to two bands at once, just a mess. If you can't taste every ingredient, you're eating pap - might as well just mix your dinner in a blender and vomit in reverse.

If all you need to do is heat something up, gas is great, say on a burner with a cast iron pan. Opinions vary but I think electricity is fine for ovens, nice temperature control. But if you're gonna use flame on meat, you can't beat burning wood.

Jesus! That is the best argument I have heard in favor of charcoal.

I mean I was leaning toward charcoal as I researched this on line but this information right here is key. I am getting an 18 inch weber kettle, charcoal and assorted wood chips. Not gonna burn my face, not gonna burn my schlong. No way.

It's a matter of preference. If taste is paramount then go with the charcoal. If convenience is a bigger factor then gas is the way to go. We do gas mainly because if we want to grill up for dinner its just a matter of turning on the grill and there's almost no clean-up. Charcoal is another matter.

One of my neighbor's gas grill blew up and burned the shit out of him a few years back.

Regulator or one of the lines was leaking inside of the cabinet. Opened the door and

WHOOOMPH!

Big ball of fire right in the face.

Had charcoal in the past. Prefer the ease of gas. When it comes to gas grills you get what you pay for. Webers cost more but they last forever. Cheaper ones like Char-Broil only last about three years.

gas is easy but charcoal is the best for heat and flavor. You need to master charcoal though or your party will be fucked. Weber and the Green Egg are the only devices Id recommend for charcoal. Having both is nice.

All considered, a very high quality gas will out perform charcoal in almost every way except flavor and high sear ability...

Weber E series. Buy once, cry once. You can get heavy gauge stainless aftermarket grates and bars from Amazon that will last forever.

Lowe's will assemble and deliver for you.

As for fuel, go with Propane Taxi or Propane on the Way. Propane Taxi also delivers mulch.

My brother from another mother. I went Weber Sumit to get the bigger grilling space and told Lowe's to put that bitch together for me. Always have at least two tanks form Propane Taxi ready to go.
