Chili making tips

With the cold weather this is the best time to make chili. I would love to hear some chili cooking ideas that make your recipe for chili a little different.

I like to use London broil in my chili rather than hamburger. I marinate the London broil in pickle juice a day or two then sear the meat over a hot fire or the oven broiler, once cooked I let it cool before cubing it up into tiny pieces. The texture of the meat is just right because the pickle juice is a super tenderizer.

I have been to many Chili Cook off events all over this country. They seem to follow an American Tradition and Conduct (beef, Pork, and Beans). Latinos and Nogs come they follow the American Traditions and Conduct and make some great chili. Jews start to come and bring kosher but they comply with American tradition and Conduct. Even the Chinks come with a rice and soy but they still go along with American tradition and Conduct. Gays come they make fucked up gay comments but they follow American tradition and Conduct. All is still good fun time and great chili.

Now you get to the sand niggers/muslims, they bring their damn goat, chick peas and Curry but fuck American Traditions and Conduct. The Chili cook off should be held primary as an Islamic event, because Allah started it all. All other cultures should banned, there should prayer and praise to Allah, nasty ass live camels and goats running around near the food. You should adhere to every thing the sand niggers/muslims say, because they know what best.


Like all American cultural events, when the Sand Nigger come, they fuck it up, expecting primary adherence to their broke down ass culture and religion. Their countries are all fucked up but they think they are great and smart. I can't think of one good thing damn sand niggers/muslims has brought to this world. Then we got these white guilt liberals and scary ass queers who think we should accept this shit.

I have been messing around with different chili recipes over the years and I am starting to build my own one from the ground up. To me, the basics are:

Four pounds of beef (any type)
Two large cans of crushed tomatoes
One large onion
24 ounces of lager
One habenero/scotch bonnet pepper
At least 8 tsp. of Gephardt's chili powder (no substitutes are acceptable)

I like TX style chili; the green and other styles just don't appeal to me.

Interesting about the pickle juice marinade; never heard that one before.

I use my grandmothers recipe and it's simple but gets rave reviews. Our kids are grown and out on their own so this recipe is for two people.

1/2 pound of lean hamburger

Two small cans of tomato paste

One large onion chopped finely

One can of diced tomatoes.

1/4 tsp of cayenne pepper

One beef bullion cube

salt and black pepper to taste

Garlic powder if you like.

Add as much water as you like. Some like it "soupy" and others like it "gutsy"


First, caramelize the onion in the bottom of the pot with a little olive oil.
Add the hamburger in tiny pieces and brown, mixing with the onion.
Drain the water out of the can of tomatoes. (too much salt already)
Put the rest of the ingredients in the pot and simmer for at least one hour
at a low temperature, stirring occasionally.

My wife doesn't like beans in it so I don't use them but others might.

This recipe is really good after it's been in the fridge overnight so the
flavors can meld. Pour (cooled) leftovers into a freezer bag and save for
another time. Fresh ingredients are always better but that's up
to you. When our kids moved out on their own one of the first things they
did was ask me for Granny's Recipe Chili and now their friends want it too.
Keep it simple. I prefer to use a beef bone instead of bullion but it's
become rather expensive.

You need to be close to the ocean to obtain this secret ingredient, but it is worth a trip...

It turns out that jellyfish are edible. Cannonball Jellyfish (Stomolophus meleagris) are the ones most commonly eaten. But for a fire-breathing chili that is sure to win your next contest, you want the king of them all, a Portuguese man o' war (Physalia physalis). It's easier to find and catch them from a boat, and their big floats that look like a large pink or purple balloon will give them away. While wearing protective clothing, pull the jellyfish in and deposit in a bucket of water. It won't matter if he dies, but keep him moist (up to 4-5 hours) until you're ready for the next step. While wearing gloves, rinse thoroughly with fresh water and chop the tentacles into bits. Then stir the tentacles into your favorite chili just prior to serving. To better preserve the nematocysts, do not overcook. Some people simply arrange a couple teaspoons of chopped tentacles on top of a bowl of chili. Enjoy.

Important note: Do not serve to anyone who is allergic to jelllyfish and Portuguese Man O'War stings. They could have a reaction and possibly die.

Okay, the previous poster that mentioned pickle juice to tenderize a London broil was absolutely right. I googled it and found the recipe below. OMG it is so good!!!





ingredients

3/4 cup salad oil
1/3 cup sliced dill pickles
3/4 cup dill pickle liquid
1 clove minced garlic
3 pounds top round beef or London broil or any favorite steak for grilling
directions

Combine all of the above in plastic bag; add meat and turn to coat. Set bag on plate in refrigerator and marinate overnight, turning meat once or twice.

Remove meat to grill, reserving marinade. Grill steak 6 inches above hot coals about 15 minutes for medium; brush with marinade when turning over. Cut meat diagonally across grain in very thin slices.

NOTE: Pickle juice is a great meat tenderizer!

For chili blends, try Pendery's out of Fort Worth. They have blends called, among others: Top Hat, Ft. Worth Light, New Mexico Light, Chiltomaline, Original, Salt Free Chile Blend, Terlingua Won, San Antonio Red, Dallas Dynamite, Colleen Wallace, Bo Prewitt, and Carol West. They're all good.

What about bison or lamb?
Chili can be made with any meat except armadillo. Squirrel, 'possum, alligator, antelope, raccoon, rabbit, and groundhog are all acceptible

heck, I use ground turkey all the time and really like it. Ground turkey breast is more expensive but it is better than regular ground turkey. I have not tried ground chicken yet. I agree about the corn though I only like fresh corn on the cob when its kind of crunchy if you put it in chili it gets mushy.

Pepper
Onion
Garlic
Cumin
Dried whole chile pepper (your choice, I like dried poblanos or guajillos)
Beef stock/water
Vinegar

If you put beans or vegetables in it, you have fucked it up. Period.

Yes, the Sauers is very good. I did not know shoppers carried it. I have been buying it on the Sauers website. Weis market used to sell it and thats where I first bought it and then got hooked on it.

The best hot dog chili is made with Vizsla, Hungarian Agár, or Transylvanian Hound. They go well with Hungarian spices.

Sauer's is North Carolina style chili spice. It is very good but I prefer Kansas City style.

Actually I like horse meat, but have only ever eaten it in France, and it wasn't in chili. A variety of animals can be and are used in chili, including:

Alligator
Antelope
Bear
Bison
Chicken
Cow
Deer
Elk
Goat
Moose
Opossum
Rabbit
Raccoon
Sheep
Squirrel
Turkey

I don't live in Fairfax anymore, so I can post this without people knowing that I do this or who I am. We have food competitions in my neighborhood. Chili is just one of the cook-offs we have. My secret ingredient is cat meat. I have one neighbor that constantly brings those little fuckers home. I have a single trap in my back yard. Once I catch one in the trap I humanely kill it with a point blank blast to the head. I have it down to 12 minutes from the time it shoot it until all usable parts are bagged and tucked into the freezer. The neighbor with all of the cats is one of the judges too. Little do they know that they are eating one of their pets!

If you kill the cats humanely that's fine. I have zero sympathy for cats allowed to run loose and feral cats. Cats can decimate the songbird population and will kill birds and small animals purely for sport, even when they have ample food at home.

It's one thing if someone's indoor cat accidently escapes out the door, but cats roaming the streets killing birds and chipmunks should be turned over to animal control ... or eaten.

I used to use dry beans exclusively, but seriously canned beans are no different quality-wise. The only advantage of dry beans is the price. They are much cheaper per ounce.

Starting with dried beans take up too much time. Literally no difference in quality, and I don't have to spend 8-12 hours soaking them, getting up in the middle of the night to rinse and replace the water, then cooking them for 1-2 hours the next day.

Just use canned beans, rinse them in a colander, and throw them into the chili 30 minutes before it's ready.

The final product is just as good or better using canned.

Yeah, back when homos were dying of AIDS, I too got in on the trend of using their flesh in various receipes, but now I don't use meat at all,a nd it all tates so much better!

I buy 3 large chili's from Wendys and mix 2 cups of white rice with them then stuff bell peppers that have been parboiled with the mixture. Then you bake them at 350 for 35 minutes and melt cheese on em. Damn good!

Try using Johnsonville Italian sausage or ground turkey. Used both and like it but since using the Johnsville that it the only way i will eat it. It's up to you if you want mild or spicy sausage.

I'll admit, this thread made me hungry, but I wasn't ready to make up a batch in the crock pot, so I took a few shortcuts instead.

1 Can of Wolf brand chili (sold at Walmart, Wegmans and other grocers).
1 Teaspoon of diced jalapeno peppers
1 Teaspoon of jalapeno pepper juice
5 Jalapeno pepper slices (from a jar)

Microwaved for 3 minutes, 30 seconds. Yum! I think when I do a batch of my own chili this winter, I'll use the diced jalapeno peppers and some of the juice from the jar as that seemed to add the right amount of spice and kick to the chili.

I alwyas add that to a pot of chili. Now, I like to rinse them off first (I find a lot of stuff is skunky when it comes out of a can and is much tastier after being rinsed) but you may feel differently.

It is a tradition at my house to have venison chili every Christmas. Made from fresh killed deer! We make a ton of it and keep some simmering in the crock pot all day and offer it to our guests and friends, it is always a big hit.

Today is a good day for chili but making it is too much work. I have put my crock pot on the counter so when Wendys opens at 11 I will run through the drive thru and get 5 large chilis to dump in the crock pot an maybe add a can of beans.
