That scene is actually when she first meets Lecter and first introduces herself, so how could he know her name? (later on in the movie when he is in Federal custody, is where he is supposed to say it,though) However, I just saw the whole movie again and he no longer says "Hello, Clarice" and Buffalo Bill no longer says "It puts the lotion..." Instead, it's "Good evening, Clarice" and "It rubs the lotion..."

He may have had a sliver leg and I just didn't notice, but there is no explaining the "Luke, I am your father" becoming "No, I am your father," especially when James Earl Jones, himself, recalls saying "Luke, I am your father" in two separate interviews years apart.
