lack of manuel tasks in restaraunts these days

Do any remember when you could order grapfruit and it would come to the table cut in half seconed out with a cherry in the middle? Most "sandwiches" are really kind of a mash that they simple spread a mash of whatever instead of put a layer of this or a layer of that. A bagel goes from .70 to 5.95 with that relitivly simple manuel task. A lot of this can in part be atributed to the decline of really sharp knives, though I might have a ax to "grind" in this

Please explain "mash". I'm familiar with mashed potatoes and the monster mash, but have never heard of a sandwich mash.

I thought a lot of restaraunts had many tasks for Manuel work in the dishwashing area.
