What's your signature dish?

I grew up watching my mother in the kitchen. Although she did get a degree and became a teacher, she could still cook. Southern mama. I ended up taking cooking classes in High School. I love cooking. I still think I should take come culinary classes to get better, but I can make a mean Lasagna. Anybody else male or female on here that can throw down? Even if it's a mean bowl of Cap'n Crunch. lol.

sidenote: Ever Grilled Shark? OMG. Try it this Spring/Summer. I just seasoned it with Olive Oil, salt, Pepper, lemon juice and a little bit of garlic.

Fantastic. I never though it would have such a juicy steak like texture. It was "FANTASTIC" as my pops would say. lol.

Sounds delicious. I'll have to try it soon. Another good one, is baking chicken wings, tossing in my own homemade sauce, and finishing them on the grill.

I'm actually laughing at that right now. lol. I thought that too at first. "Is this dude setting me up?" Baking first then grilling and boiling first then grilling I heard are both great ways to do it. Special Sauce...come RP..were you being serious or not champ? lol

Hay Zeus, I dont man. Only top of the line deserts in my family, are my moms Carrot cakes. She used to bake them like they were coming off an assembly line. She made like 10 recently. All were consumed within a few days. I still can't make one. lol.

I got a taste for my beer steamed clams. I usually add about 3 table spoons of butter, 2 cans of beer (if it evaporates too fast add another can) and I cut up fresh garlic. Boil them until they have all opened. You may need to turn the heat down 3/4 of the way so they don't get rubbery. I still serve them with lemon wedges and hot sauce. It gives them a nice little burst of flavor.

I do just the opposite with burgers. Sear them on the grill then bake them to finish.

Keeps from drying them out.

Well I know this is pretty sad but I think I make good sandwiches. Tuna is maybe my favorite. Just chop up some celery and and mince an onion and set it to the side. Get a pinch of parsley and dill and some mayo and mix it all together with the tuna. Lastly, I add some lemon juice from a fresh sliced lemon. Adjust the amounts depending on how much I'm making.

Serve on toasted bread with a piece of Swiss cheese.

It's nice to have a normal thread here.

I've worked seafood counters in my youth. If you examine sea scallops and they don't have a "fingerprint" impression, it's shark or other "trash" fish that's been stamped out into scallop shape.

An oldie but a goodie - boeuf bourguignon. Lamb couscous (try it, you'll like it). Pork roast with rosemary and fennel. Pineapple kugel. Lots of things. I like food that looks and tastes like food. I'm not interested in a portobello mushroom 'pretending' to be a steak.

The dish I'm best known for is macaroni and cheese, but it's not that orange gooey crap. I make two kinds. One has cooked macaroni tossed in a casserole dish with lots of cut up sharp cheddar, covered in milk to near the top and dotted with butter. The other has cooked macaroni tossed with cheddar and a can of tomato sauce. Both baked for about an hour. Everybody loves this.

Ahmayzin, you might try smoking fresh bluefish on the grill. It's delicious.

Priapus - I'll never look at scallops the same way.

I can crank out some great homemade soups. All recipes I came up with and honed on my own. My split pea & ham is pretty damn comforting, I can eat it 2 or 3 times a week. I make a rockin minestrone too.

This is great, Lizzie is so boring! Now I'm hungry too! TheNorthman... another good thing to add to a tuna sandwich (which I'm about to go make right now) is sliced cucumber. The freshness and crispiness are a great contrast to the tuna.

Pizza PAsta-- Ive heard of that. My lasagna is a meat and veggie mix. I cut up garlic, onions, green, red and yellow peppers. I remove the casing from Italian sausage (mild, sweet or spicy), then cook it in with the ground beef. Throw the cut up peppers onions and garlic after then meat is browned. For the cheese mix I use cottage cheese and ricotta and my secret ingredient (well it was a secret..lol), is I mix sour cream in the cheese sauce. A pan never lasts more than a day or two.


Thank you--My mom used to put fresh dices apples in my tuna fish. So it's tuna, relish, diced apples and mayo. OMG!! I put some fresh green leaf lettuce and a tomato slice on that bad boy....MONEY!

I do this as well. Finishing them on the grill gets them nice and crispy so it's almost like they are fried but less fattening. Salt and pepper in the oven before saucing. I’ve also found that to my tastes, margarine makes a better hot wing sauce than butter though I use both. I just stick with Frank’s Hot Sauce, you can’t go wrong.

This is going to sound terrible but it's awesome for tailgates and get togethers...Sausage and Cream Cheese dip...

1 lb bulk sausage
2 (8 ounce) packages cream cheese
1 (10 ounce) can rotel, with liquid drained out

Directions:
1. Brown sausage in skillet; drain excess grease.

2. Add cream cheese and cook over medium heat until melted.

3. Add Rotel and mix.

4. Serve warm with chips or fritos

I call it "Crack Dip" because it's hard to stop eating it.
