What I don't get about the McRib is...clearly there is value in the whole "Look! We've pressed it into the shape of bones and meat!" because that's how the thing has been made since it's inception.

But...

If consumers were given a choice AT THE SAME PRICE POINT between:

1) The traditional tripe, stomach and heart pressed into the bones and meat patty.

2) An anonymously oval shaped pork patty containing no tripe, stomach or heart.

...they'd pick #2. Why wouldn't you want the higher quality meat, if unshaped? I just don't get it.

The McRib is primarily pork meat pieces (primarily shoulder) that are unmarketable - i.e. the wrong size, cut improperly, etc. Innards including heart, tripe and stomach are not incorporated. Just had one yesterday after years of abstinence - totally yummy - McDonald's nailed both taste AND texture - not =naturally=, but merely satisfyingly; their food science continues to be fantastic.
