I had heard from a friend (from Alabama) that Willard's had pretty decent barbecue for the area. So I tried it last month.

I enter the joint. It smells good. Looks clean, but I immediately note that the staff are all illegal immigrants. Hmmmm.

I step up to the counter and ask for barbecue.

The fat white guy behind the counter asks, "What?"

"Barbecue. A barbecue sandwich."

He looks at me oddly, then proceeds to ring something up.

When I pick up my order, my sandwich has pulled pork, sliced sausages, rib tips, and fucking pickles. WHAT THE FUCK IS THIS?

I walk over to the counter and ask what this is? Surely, there was a mistake.

"Well you didn't say what you wanted so I ordered you the combo sandwich."

THROUGHOUT THE MOTHERFUCKING SOUTH, AT ANY BARBECUE JOINT IN WHICH I ORDER "A BARBECUE SANDWICH" I GET A MOTHERFUCKING PORK SANDWICH. THERE MAY BE REGIONAL VARIATIONS - VINEGARED, SAUCED, PULLED, CHOPPED, WITH/WITHOUT SLAW, ETC - BUT EVERYWHERE IT'S A MOTHERFUCKING PORK BARBECUE SANDWICH.

I educated the fat fucker on this fact and he lamely said something about this not being in the South.

Let's approach Willard's as a theme restaurant, a barbecue themed restaurant, such as RH&B or Daves. The terms "a barbecue" or "barbecue sandwich" are pretty darn universal for barbecue joints.

If I"m up north and I order a clam cake or a lobster roll, I know what I'll get. If I go south and order an oyster cake or A Barbecue, I know what I'll get. There are regional variations, but the Platonic form is still there.

Beef tips, pickles, and sausages are not encompassed in the Barbecue Platonic Form.

Now, let me say this: the food is good... for carpetbagger barbecue.

I miss Memphis BBQ here in Reston. That was a good joint, and their Mississippi Mud Pie was awesome.

As for all time BBQ, King's down in Petersburg, VA is absolutely amazing. It's owned by brothers, and they even have their own BBQ sauce. People come from all of the surrounding communities to eat there.

I would suggest reading the menu before the next time you place an order in a restaurant to which you haven't previously been. The guy probably gave you what you got to get you the fuck out of the way considering there is always a line in that place. He didn't need your numb-nutted dumb ass holding things up any more than you already were. Bottom line: enough people like the place that your opinion couldn't matter less given the nature of your complaint. You're luck you got a sandwich at all in spite of fucking up the ordering process...

It's not Fairfax, but hop the river on Rt. 1 into Hoodbridge and go to Dixie Bones. It's not true southern BBQ (nothing around here is), but it's stilll tastes good.

Closest thing to Fairfax that might pass as reasonably close to southern BBQ would be Pierce's Pitt ... of course that's down in Williamsburg.

Now let me educate you, you dumb BBQ amateur.

BBQ comes in different forms all over the country. There's North Carolina BBQ, Kansas City BBQ, Memphis BBQ and many more variations and they aren't all pulled pork.
Willards offers a variation of KC BBQ (beef burnt ends) and a variation of NC BBQ (pork/vinegar). Both are excellent IMO.

I will agree with you that this is NOT a BBQ savvy area and that BBQ refers to a sandwich, not the verb (to have an outdoor BBQ), but it is clear you know very little about it as well.

You should have read the menu (if you can read) and been specific. Many people like cole slaw on the sandwich, some don't. Some prefer beef over pork and some like a mix of the two.

You can't and shouldn't speak for the entire array of southern states and not you're not intellectual enough for Northern Va, so I suggest you move to Ohio or West Va and stop insulting things you know nothing about.

DIXIE BONES...if you want good BBQ go to Dixie bones in Woodbridge, it's in a terrible area where everything else is closed, but they have some awesome BBQ. Bubba's on Lee Hwy in Merrifield for the win. He's got a good handle on how to do it.

In a pinch, Boss Hog's or Three Pigs in McLean are serviceable too. None of them are quite what I'd expect in NC or Memphis, but they're closer than the BBQ-themed restaurants.

I was a waiter in college so I'm always nice to people who serve my food. I know it's tough job and it's not for everyone. But I can't stand servers who are rude to their customers. I am the customer and they represent the restaurant. Serve my fucking food with a smile and say thank you. Another think I hate is when I say thank you and they don't say shit. They should say thank you. I just paid them money for food. I bet the owner of the place would hate to see their shitty attitudes. That's why businesses fail.

Willards is based in Boston, MA. It goes by different names depending on where it's located. They have more than one location in Virginia. I've been eating at their two Boston locations for decades. Love their BBQ (especially the Burnt Ends)! So, yes, they are carpetbaggers. Who cares - they serve great food! Willard's is a hit and miss joint. Had some OK BBQ there, nothing really to brag about. Some BBQ was not the best quality. When a place has to chop up the BBQ so fine they are hiding something, that's the part not to brag about.

Nothing in this area can compare to the BBQ in KC and there are too many restaurants to name in KC. KC, I don't consider a Yankee joint but rather just well smoked BBQ. Brisket, Ribs, Pork.....Please someone tell me where the best BBQ can be found in Fairfax County and I will try it.

They slow smoked with hickory wood in a pit. But its gone now, BBQ World in Burke. A real surprising place, many years back I knew a Greek who owned Pigs BBQ in Rockville. He told me how hard it was to get permits ect for a real hickory BBQ pit. Well BBQ World had just that,he burned hickory wood really slow , he slow smoked ribs, chickens, all day and turkeys at holidays.

The famed Dixie Pig on Rt 1 had a Ok BBQ, and it was by looks a real BBQ place. Long gone today. I never tried Roy Jeffersons BBQ but I heard it was good also and its gone too. As well as the place in Manassas by Yorkshire.

Willards is good they cook in some type of bbq oven, Red Hot and Blue have some kind of oven that injects a smoke flavor from what I have heard.Their potato salad is great and often copied, their BBQ is good.

The Smoke Shack in Maryland Oxen Hill is good also, people line up at the time the ribs are done. Johnny Boys in La Plata Md had good BBQ years back, Then they started making rubber ribs and after a few more trys I gave up on them.
Allmans in Fredericksburg has good BBQ and super cole slaw with the old time boiled dressing

In your back yard on a Weber BBQ like the Fat Man does it , and about 6 hours time

Otherwise forget Fairfax, Try the Smoke Shack in Maryland. You will have to see what time the ribs will be ready, Try about 3pm Theres a Harley Davidson shop down the street to eyeball bikes to pass some time. It's on Livingston Road off Indian Head Highway just over the WW bridge, A liquor store Sunnybrook is on the corner of Livingston and Indian Head.

Great post "The Fat Man Knows BBQ" - I agree with you about Red Hot 'n Blue. Their beef and brisket sandwiches are pretty good. Also, agree that some of the best you can often find in your own backyard on a Weber. I been cookin' only with charcoal and mesquite for the last 30 years. Having found chicken better than I can do on the Weber, Ribs are tricky to get exactly right. Only way, keep the GAS I say. May try the place in Maryland you suggested, but that is a long drive for me.

They would have to pay me to eat at Dickey's. No way, never again.

Been to a couple of company events that were catered by Dixie Bones out of Woodbridge and they had some of the best Ribs around this area.
This is going for to about 2000 or so but Doc Harry's next to the Centreville Multiplex had maybe the best baby back ribs I ever ate. The owner would come to your table and tell the story of how he won a couple of BBQ contest in Memphis.
It only lasted a couple of years. Maybe location......now their is a Bonefish Grille at that spot.

The way I do any slow cooking on the Weber is with a Virginia Pig Rig. I have the Smokey Joe hooked up on a table with the 2 1/2 Weber I start the coals in the metal Weber baskets with about 25 coals in each then slide them apart when hot, I take the ribs out before lighting the fire and clean them and pull some membrane off, Then I may rub them with a home made rub or put on some Emerils Essence seasoning. When the coals are ready I slap the ribs in the center and add about 1/4 cup of hickory thats been sitting in water to the coals and close the lid with all vents open. I dont peek after that.And yes you can BBQ when its cold out.It just may take a bit longer

This Weber I have has a Thermometer in the lid, The new Gold ones do too and I have drilled and put one in a older silver Weber. After I put the lid on the temp goes up to about 375 then gradually starts slowing down after a hour. When it gets down to 275 I light off some new coals in the Smokey Joe, When they are ready I add them to the big Weber, this way I only add hot coals and it keeps them cooking with no coal flavor, After some more cooking there ready to sticky sauce and cook some more or pull off and thats it if Im just rubbing them .

For sticky sauces I like Uncle Yammys BBQ sauce , its from N.C and only available at places south of Fredericksburg, I also like Sauers from Richmond, Open Pit and Sweet Baby Rays original.

I also sometimes just use a pig sauce, vinegar and peppers. A friend of mine made some Pig Rigs and I copied his idea and made mine. He makes a good rib with a vinegar sauce with some jalapenos cut up in it.

I had Dixie Bones one time, had chicken and it was good. Theres a place in Fredericksburg called Post 401 and Dixie Bones trucks are there but I have not tried it, Theres also another BBQ on Rt 1 thats not Allmans, Virginia BBQ I have never tried that,just seen them.

BBQ is expensive today to get eating out, I have never been to Famous Daves or many of the other chains. I do it my self because I can and its cheaper. But I do like Willards now and then for a pulled pork platter with slaw and potato salad at 9 dollars its reasonable for all you get.

I perfer the East Carolina BBQ the most, pulled pig with the vinegar mop sauces, some slaw .

One place I would love to try is the Salt Lick in Texas as well as any of the truely famous places anywhere in N.C, K.C. you name it. A plate of chicken, ribs, sausage, pulled pork, potato salad, cole slaw, beans ,with a jalapeno a couple of sweet pickels corn bread and a ice cold Shiner and I would be good to go. in Time Life books Foods of the American West a book in a series about food round the world and the US they sold at supermarkets in the 60's and 70's
theres a couple pages of Texas BBQ and a pic of a plate filled with what I just mentioned, now and then when feel like spending some money I have duplicated that plate and its great! Those books can be found at used book stores and have some good traditional recipes from all over.

I've been to Salt Lick near Austin and to me it's the perfect setting to eat BBQ and drink lots of beer. You can bring your own cooler of however much beer you want and they provide the ice.
The BBQ is good but not as good as some other places around Austin, like Franklin's, but the atmosphere and location of Salt Lick is fantastic.

"A barbecue" means a pulled pork sandwich. End of story. The dude at the counter was probably new or just an illegal who didn't understand. You're lucky he even spoke English.

There is good barbecue all over the country and the challenge is to retain the regional variations and resist homogenization. Willard's is ok -- even good, but not outstanding by any means. The place in Burke was better.
