Ceramic tiles are just like dishes, and have a glazing applied to the tile, then the glazed tiles are fired to bring the finish to the desired color and finish. Once fired the tiles cannot be changed, and the finish is usually smooth, and non-porous preventing stains.
Porcelain tiles are not glazed, and the color and finish are achieved during the firing process. Porcelain is not as durable as glazed tiles, and requires special attention to prevent staining - This explains the protective coating to prevent damage during install. Although porcelain provides a deeper luster, it is generally not installed unless it a higher end home or facility.
If you are paying for porcelain tiles I hope you have purchased extra tile to have as a spare replacement, because the porcelain tile is fragile, and is easy to break.
Buying replacement tile from a different production lot at a later dated will create a situation of mis-matched colors be it ever so slight.
