Each fall I brew 50 gallons of Stribling's freshest blue ridge cider half of which is enjoyed as a crisp hard cider with just a doughy whiff of the old time dough ball yeast strain passed down my family since long before prohibition. The other 25 gallons is poured into an ancient charred out oak stump way up on the mountain. Each morning until Christmas Eve I break up the ice and crush up the ice to release the trapped nectar before tossing out the clear shavings of water. One year I had it proofed at 87% abv and it contains a whole new world of aromas and flavors destroyed in common distilled liquor.
