Corned beef was not "intended" to be prepared in any particular fashion. In fact, there are numerous ways to prepare it with differing delicious results.

Corned Beef smoked is of course basically Pastrami (as the OP knows) especially w/ the addition of a peppered crust. Low and slow at 250....time will depend on the size...take to @190 to beak down the collagen. Sliced on the bias of course.

More important than slicing on the bias is slicing against the grain. That's should be the first word of advice when it comes to slicing. A foodie would know that as well.

Since you got no answers, 225 degrees at an hour and a half per pound...actually never tried to smoke corned beef, but that's my temp for bris and pork.

If you get the pre brined ones from the store, soak it in cold water for a few hours to take some of the salinity out of it. I use a pepper and light brown sugar rub (no salt). On the smoke for 3-4 hours in a racked pan and then cover loose until you hit 190 internal temp. Rest for 30 mins and enjoy. It tastes great. You can get away with cooking at a little higher temp due to the brining. Cuts down on the time as well. Keep the smoker temp around 275-280 but no more

I think at a middle temperature, and I like to cook dried meat most of all, and here is my recipe. My marinade consists of Worcestershire, soy sauce, a couple of drops of Tabasco, ground black and red pepper. The meat is slightly frozen to make it easier to cut, cut into thin strips. I put the strips of meat in layers in a container, pour the sauce over each layer with a spoon or brush and put it in the refrigerator. Marinated meat for about a day. I discovered this recipe when I tried Bigwig Jerky and I really liked it. Next, I take out the strips, blot them with napkins to remove excess moisture and speed up drying. Then I string the meat on toothpicks and put it on the oven grill.I light the oven on a small fire, open it slightly and the meat dries for 3-4 hours. the main thing Is that it does not completely dry out. Then I close the oven and turn off the gas.
