Those going to take in a game at Nats Park, may decide to go cheap and park under 395. In order to do so, they could take exit 6. Well, look what happens when you sleep in until almost 11:00! Not sure when the last time was that I managed to do that, but it sure was cozy and comfy in bed this morning. Twitter continues to flag it all, and of course, intelligent people simply flush it. He's making the well-earned and much-deserved failure of his electoral demise only worse.

In other news, 19,901 excited fans at the PayPay Dome in Fukuoka saw the home team Softbank Hawks capitalize on speed and defensive lapses by the Chiba Lotte Marines to record a come-from-behind 4-3 win and take a 2-0 lead in the Pacific League Climax Series. One more win or even a tie will send the Hawks to their fourth straight Japan Series, starting next Saturday. They'd meet the Central League champion Yomiuri Giants who yesterday closed out their 2020 regular season with a walk-off 5-4 loss to the DeNa BayStars in Yokohama. The Hawks swept the Giants, 4-0, to win the 2019 Japan Series, so there would be scores to settle if a rematch came to pass.

Nothing much to settle in faded Falls Church City of course. The place is pretty much just a lackluster dump, and everyone already knows it. Thanks to some EDA funding, four new 'Welcome to Falls Church' signs should be installed by next summer, but that won't make the Sorry City any less sorry or the resident liars any less scurrilously shameful.

GRILLED LOUP DE MER WITH BRAISED FENNEL

This simple grilled fish has lovely, crisp skin and is paired with a simple citrus sauce. Loup de mer is also known as branzino; have your fishmonger fillet it for you.

Splash the brandy on the fish fillets and season with the remaining spice mix. Rub the remaining tablespoon of olive oil over the fillets. On a hot grill or grill pan, place the fillets skin-side down. Leave for 3 to 5 minutes, until the skin is crisp. Flip over and finish cooking the fish, about 2 more minutes.

Grill the braised fennel slices on each side until golden, about 2 minutes.

Place the grilled fish and fennel on a plate. Cover with citrus sauce and garnish with chopped basil.

Charles Phan, a multiple-time James Beard Foundation award winner, is known as the father of modern Vietnamese cuisine in North America. He uses fresh Ports Seafood fish and shellfish each day at his ever en vogue San Francisco restaurant, The Slanted Door.


RECIPE:

Grilled Whole Branzino

BY CHARLES PHAN

1 each , (1 ½ – 2 lb) whole branzino from Ports Seafood (cleaned, with head and tail intact)
Kosher salt
Black pepper, ground
1 by 1 inch piece fresh ginger, cut into thin coins
2 large thai basil sprigs
2 large cilantro sprigs
3 thin lemon slices
3 thin lime slices
2 T canola oil or olive oil

Dipping Sauce

2 ½ T freshly squeezed lime juice
2 T fish sauce
2 t sugar
1 t peeled and minced fresh ginger
¼ t minced garlic
¼ t minced thai chile

1. Prepare a hot fire for direct-heat grilling in a charcoal grill.

When the coals are ready, place a cast-iron griddle or large
cast-iron frying pan on the grill grate and preheat until very
hot.

2. While the fire is reaching temperature, rinse the fish in cold

water and pat dry with paper towels. Season inside
and out with salt and pepper, then stuff the cavity with
ginger, basil, cilantro, and lemon and lime slices. Drizzle oil
on both sides of the fish and set aside.

3. To prepare the sauce, stir together in a small bowl the lime juice, fish

sauce, sugar, ginger, garlic and thai chile until the sugar has
dissolved. Set aside.

4. When the griddle or pan is very hot, add the oil and fish and

let cook (without moving the fish) for about 6 minutes, until the skin is a
deep golden brown and is no longer sticking to the griddle. To
check, gently try to lift the fish from the surface; if it does not release easily,
continue cooking until it does.

5. With a large, wide spatula centered at the middle of the fish, flip

the fish and cook on the second side until golden brown. After
1 minute, begin checking to see if the fish is done. Inset the tip
of a knife into the fish and wiggle it gently; the flesh should barely
cling to the bone. If you feel resistance, continue cooking, repeating the
test until the flesh flakes off the bone easily.

6. Transfer the fish to a platter and serve immediately.

Accompany with the dipping sauce.

But what about seafood, you might wonder? How can fish, which grills so quickly, offer much room for creativity? That speed never stops me. I like to skewer jumbo shrimp on branches of fresh rosemary, for example. I grilled whole sides of marinated salmon fillet and accompany them with delicious vegetable salads and garlicky, Greek-style yogurt sauces. And I top halves of hot-off-the-grill lobster with spicy butters that form an instant sauce right in the shell.

Whole medium-size fish just large enough to serve four to six people offer some of the best opportunities for creativity. Choose a fresh variety that’s the right size for a home outdoor grill, like a 3-pound red snapper or sea bass, and it’s easy to make a really big impression, as you’ll see when you look over my recipe for Mediterranean-style grilled whole red snapper with fennel and Pernod butter sauce.

Keep sustainability in mind when shopping. Lots of fish sold as “red snapper” in markets today are not true red snapper, and some may not come from sustainable fishing practices. Always buy from a reputable fishmonger and look for red snapper caught in U.S. Gulf of Mexico waters, which is considered a good choice. A good alternative is branzino, also known as Mediterranean sea bass.

Let me offer one final word. I know that the idea of grilling a whole fish may seem daunting. But do it once, and you’ll be surprised by how easy it really is to “go big” when cook seafood in your own back yard!

1 whole fresh red snapper or other firm-fleshed mild white fish such as branzino or sea bass, about 3 pounds, gills, guts and scales removed

Well, it's nothing but another gorgeous morning out here on the wealthy person range lands known as the Sweet Spot. A bright sun is shining down from crisp blue skies, and it will keep doing that all day long. There are light winds out there but no noticeable humidity at all, making for very pleasant conditions that should persist as we get set to spend most of the afternoon enjoying temps in the mid 50s. It looks like we've all got plans and commitments this afternoon, but we may try to work in some sort of quick lunch with The Principals today. Maybe we'll just grab our individual Subway sandwich favorites and chow down on those. Delicious, and it's not like any of us is burdened by the status nonsense that clogs up the brains of so many from the lower classes. Bunch of dopes, those clowns are.

Also badly clogged up of course are the deranged thoughts of President Two Weeks, aka President Ding Dong. He has no cases of merit to bring before the cours, but seems intent anyway on declaring himself some sort of shadow President in Exile. Maybe FOX News will go along with that sort of delusional thinking, but not a lot of other rickets are going to be sold for that ride.

In other news, the Hawks were down 3-0 to the Marines after the top of the first inning last night, but Akira Nakamura slammed a pair of 2-run homers, and the SoftBank bullpen was able to escape a bases-loaded one out jam in the ninth with a crucial K and then a harmless fly-out to finish off a 6-4 win and punch their ticket to the Japan Series against the Yomiuri Giants. That series will get underway on Saturday at the Kyocera Dome in Osaka.

Never really getting underway at all of course are the ass-dragging dolts and dregs of disastrous Falls Church City. Unable to learn from their own piles of mega-mistakes, they can only babble on in futility in the wake of their many frustrated lies and other failures. Things just never get any better or brighter for these dopes.

Meanwhile, it's gotten rather chilly out here in the Sweet Spot now. Frost on the ground out here this morning after an overnight low of 30 degrees. Not so bad now at 43 degrees and we'll be breaking into the 50's here shortly. Still, winter is barging its unwelcome way into the region, and there's not a lot we can do about that. A foursome of our wildlife friends made way for us by scampering off to the west as we pulled out of the driveway around dusk last night, but no sign of anyone yet today.

James Beard Foundation Award-winner Tony Maws, chef/owner of Craigie on Main, in Cambridge, Mass., didn't go to cooking school. Instead he has worked in 17 restaurant kitchens, performing every job along the way. His cooking joins his lifelong enthusiasm for food with refinement learned at top restaurants in the U.S. and France.

Here are his recipes for rye flour pasta and grilled loup de mer kama.


Preparing the Grilled Loup de Mer Kama:

Toast and rough grind the spices.

Mix with the remaining ingredients except the lemon and lime juice and marinate the kamas for 1 hour or overnight.

Season liberally with coarse sea salt and fresh cracked black pepper.

Cook over medium low heat, skin side down, on the grill until the skin is well charred and crispy.

Flip over and continue cooking until the collar is cooked all the way through.

Season with remaining lemon juice and serve.

And dropping James Beard Foundation Award winners are useless on this fraud. Do you think he has any idea what that signifies? How many sandwich artists are James Beard Foundation Award winners? He likely doesn't know what a Michelin rated restaurant is. He probably thinks it has something to do with tread life or traction.

So the dead-fish Whiffie Klown Kar careened and babbled about in all its typical ignorance yesterday, and to its own odd, endless, and mindless purposes. All the while of course, the crew was completely oblivious to the shrouds of surrounding fact and failure. Times may change, but the unidimensional Whiffies do not, ever oiffering just the same old expired, expired, expired loads of disproven manure as always. Thanks, Aunt Bonnie.

Meanwhile it was IT upgrade day out here in the Sweet Spot, as a new and slightly larger smart TV with sound bar was brought in and installed, along with a new and improved router and home wifi network. That led to a lovely afternoon of joining new controllers and old devices to the new environment. Desktops, laptops, iPads, cellphones -- it was a lot of new password entering to get through. We did lose a couple of satellite land-line phones for a while, but the wife was quick to spot and fix the problem. Things seem to be all shipshape now. I can pretty much take or leave the new TV, but the wife is quite taken by it. I am glad to have the new controller for TV #2 as all of the buttons actually work. Yay.

There was also a visit yesterday to the vet where one of our elder cats has been since Monday after having some sort of concerning episode over the weekend. His major systems have all checked out okay for his age, so hopefully he'll get an all-clear and we can bring him home later on today.

And in other news, The Principals are off this week, but instead of bopping off to the islands as they often have, they are staying more or less local and doing a restaurant week of their own. They were of course out with us on Monday, and last night they hit up Claire's at the Depot out in Warrenton. No mention of directions or parking, but the food was marked down for being just plain bland. That sort of thing can unfortunately happen in this age of all natural, all organic, farm-to-table food. People can forget that there is a difference between proper cooking and mere preparing, a difference that often involves proper heat, along with selected herbs, spices, and seasonings to give a dish its life. Anyway, they were kind of disappointed with Claire's all in all, but they will have more chances yet, as the tour marches on this evening.
