A Fairfax Underground Public Service series to stretch that welfare payment with good eats cheap!

"Southern Black Eyed Peas Smoked Sausage and Corn Bread"

FOR 5 people

1 bag of black eyed peas 2.00

1 pound link of any type of smoked sausage 4.00

Onion and celery from salad bar at grocery 1.25

Yellow corn meal .50

1 egg .20

Milk .40

Flour .65

Margarine .70

2 tablespoons sugar .25

Baking powder .20

Vegetable oil .40

Total cost $ 10.55 = 2.11 each serving add .25 as a extra for 1 teaspoon Cajun spice to Blackeyes as they simmer

Open blackeye pea bag, sort them out in big bowl , remove any stones, soak in water 6 hours covered 2 inches over in the big bowl

Put blackeyes in pot with 2 inches water over them, bring to boil and simmer add chopped onions and celery, simmer till tender about 1 3/4 hours, cut sausage into pieces fry in pan 3 minutes turning often on medium heat and add to black eye peas simmer 20 minutes add water as needed as it all cooks.

Mix 1 cup corn meal and 1 cup flour together, add 1 teaspoon baking power 2 tablespoons sugar and mix it up, add 1 egg and milk to make a batter. Pour into 9X9 pan and bake at 400F 20 minutes till toothpick comes out clean stuck in center

Use cooked rice instead of corn bread deduct $ 3.30 add .75 deduct 2.55

8.00 and 1.60 per serving fill ur up cheap for 5

1 pound dry pasta 1.50
1 28 oz jar spaghetti sauce 2.00
2 15 oz cans green beans 3.00

6.50 per serving four people 1.62

Add 1 pound ground beef 6.00

12.50 per serving four people 3.12

Just like in the days when schools served spaghetti and meat sauce and green beans

McDs hamburger small fries no drink in NOVA 2.40

Spaghetti with olive oil and minced garlic makes a good dish on the cheap .50 cents each serving for four people 2.00 for the whole dish.

ALSO A BIT LESS THEN 1/4 CUP VEGETABLE OIL to the batter

DAJAX It will work never the less, be a bit dry and crumbly without the oil or shortening or butter LOL
