DAJAX'S Newest Meatloaf..Subject To Change Natch..LOL
2 lbs 80 % cheap ground beef
Piece of Green pepper chopped
Slice of onion chopped
3/4 a carrot minced fine thur food processor
Teaspoon of Garlic Powder
1 tablespoon Worcestershire Sauce
Sprinkle of Black pepper
2 Pieces White bread crusts removed mined fine thru food processor
3 tablespoons Italian Bread crumbs
Splash of milk
1/4 -1/3 cup Low Salt 50 % Less Campbells Beef Broth
Mix it up ..don't pack it too tight into a loaf..put it in a loaf pan .flatten the top with a spatula Bake at 350 about 50 minutes till its 155-160 F Pour off the grease ..not in your sink..! Keep 2 tablespoons grease. Make the gravy.
DAJAX'S Meatloaf Gravy
2 Tablespoons of fat drippings from meatloaf
2 tablespoons flour
2 tablespoons half and half or milk
Low 50% less salt beef broth from the opened can as needed..
Slap the drippings in a Iron skillet..add the flour and with a big slotted spoon stir it up over med heat.. cook a couple minutes. Add beef broth a splash of Worcestershire and simmer till it thickens ..add some half and half or milk and stir till its the thickness you want..Too thick and it will be like glue..LOl ..Thin and its perfect and will thicken if refrigerated..
Add salt if you want..Natch or Black pepper or use regular beef broth as It does have more flavor..
DAJAX Very Similar in Taste to Dixie Pig It was good..Ya..! Their gravy was darker. Kitchen Bouquet?? In any event they would have used simple ingredients not too expensive to make and the beef broth gives good flavor and moisture on the cheap and you make the gravy with it too..!
No Dammed Thyme in meatloaf..!! Like The Piece I got at Silver Diner in Rockville years back..And Ive not been back..!
