Which type of white grapes do I use? Cotton Candy? Reisling? Sultana?

Reisling if serving fruit. However, the fat content in cheese allows you to serve even the most astringent red wines. In fact, that is why most wine tastings feature cheese to pair with reds (especially crappy or strong reds). If you are buying wine buy eating only crackers or fruit if sampling fruity sweet wines.

Arrange the cheese in layers and put the cold cuts in the middle. Also you need some crackers. And then its done. Enjoy!

If you are going to be a lowlife and serve boring-ass gouda, You should whack one out on top of it. It will make that shit more flavorful and I just laugh and laugh on how much my mother-in-law raves about it.
